This recipe will make 12-14 cookies, with 5cm (2 inches) in diameter.
Ingredients:
150g (1 metric cup) of whole raw almonds or 140g (1 2/5 cup) of blanched almond flour
70g (1/2 metric cup) of powdered sugar
2g (1/2 tsp) of baking powder
a pinch of salt
1 tsp of orange zest
1 egg white
5 ml (1 tsp) of orange blossom water*
5 ml (1 tsp) of rose blossom water*
5 ml (1 tsp) of orange juice
------------------------------------------
2 tbsp of vegetable oil, for rolling
For decoration:
almonds, hazelnuts, pistachios
Instructions:
Blanched almond flour:
Soak the almonds for 2 minutes in hot water.
Drain the water out, and remove the skin by gently squeezing the almonds out of their skins.
Toast the nuts (continuously stirring) on dry pan on medium low heat for 5 minutes or until they become dry and lightly golden.
Grind the almonds in the food processor until you get a flour like texture.
Cookie dough:
In a bowl combine all the dry ingredients.
Beat the egg white for a few minutes until it becomes foamy and opaque.
Add the beaten egg white, the orange juice, the orange and the rose blossom water to the dry mixture.
Incorporate all the ingredients until you get a moist paste like dough.
Oil your hands since this dough is very sticky.
Take a portion of the dough (about a walnut size), roll it into a ball, then press gently to flatten it a bit.
Place the cookies on a baking sheet lined with a parchment paper.
Decorate each cookie with a nut (of your choice), by placing it into the centre of the cookie.
Bake in preheated oven on 176C / 350F for 15 minutes, or until lightly golden.
Let the cookies cool down before serving.
Note:
*Orange and rose blossom water could be substituted with vanilla extract.

Please check out my bestie YT friend, Tammy (yoyomax12):
Tammy and I have been friends for many years and met here on YouTube! Since then we have met up in real life many times. You will LOVE her tutorials and learn how to decorate cupcakes better than most bakeries do. She lives in Canada, but I really wish she lived next door.
Also check out Jenn. You will love her as well.
She and I have just recently become YT besties, have now met in real life twice and done some video collaborations together. When we are together, we get each other. It is hard to explain to people sometimes what you do and it is nice to be comfy knowing that she also understands everything I am talking about. Oddly enough, she too lives in Canada. I may have to move there soon since such awesome ladies are produced there!
Lastly, smile! I like it when you smile :)

Ingredients For 3 Ingredient Almond Flour Cookies:
☛ 1 cup almond flour
☛ 3 tablespoons honey or 2.5 tablespoons maple syrup
☛ 1/4 teaspoon baking powder, optional
☛ 1 tablespoon of water or milk, or as needed
How to make 3 ingredient almond flour cookies;
1. In a medium-size mixing bowl, add almond flour, baking powder, and honey.
2. Combine all the ingredients with a spatula first, and mix well using your hand until everything is combined.
3. Now add about 1 tablespoon of water/milk and then squeeze dough with your hands mix well to knead until they form a smooth and slightly sticky cookie dough. Keep it aside for 5-7 minutes.
4. Preheat the oven to 350°F/175°C. Line a baking sheet with parchment paper.
5. Grease your palms, and scoop the dough with a measuring tablespoon, and shape about 9 large or 12 medium-sized balls.
6. Place them 2 inches apart on the prepared baking tray.
7. Now, flatten each ball with the flat bottom of a measuring cup or fingertips.
8. Use your fries or a knife fork to create a design for cookies. To make a design, simply press the fork/knife into the rolled balls.
9. Bake in a preheated 350F oven for 10 to 12 minutes until the edges are slightly golden and slightly hard on top, and the centers no longer look wet.
10. Once baked, remove the cookies from the oven and let them cool on the baking tray for 5 minutes. At this point, cookies would appear a bit soft, they will harden once they are cooled.
11. Now transfer them to a cooling rack, and let them cool down completely. Enjoy them with a glass of milk, tea, or coffee.
