3 pounds navy beans
Northern
1 tablespoon baking soda
1 tablespoon salt
1 16 oz jar Karo Blue Label syrup :
looks like molasses
1/2 pound brown sugar
2 14 oz bottle ketchup
1 -2 pounds salt pork sliced
6 large Maui onion :
diced
Wash beans; soak overnight in a large bowl with plenty of water. Next day drain; place beans in a large pot in fresh water and bring to a boiling point. Add 1 tablespoon baking soda. Stir for a few minutes. Drain in colander. Rinse pot and return beans to pot with fresh water. Bring to a boil and reduce heat to a simmer. Cook until tender. Add 1 tablespoon salt and simmer for an additional 5 minutes. Drain; retain water. In a large casserole mix beans, Karo syrup, brown sugar, ketchup, sliced salt pork and diced Maui onions. Bake in slow oven (275-300 degrees) for about 3 hours - or longer. Add retained water, as needed. Absolutely fabulous beans!

How to make Ghanaian meat pie
This simple step by step guide will help you to make a delicious and moist meat pie.The method for this pie might seem long but it is very easy and fun to make. The process itself takes about 30minutes to 1 hour depending on the quantity you are making. In Ghana, it is used as snack for refreshment at most ceremonies ranging from funeral to naming ceremonies.
Ingredients:
Filling for the pie
500g Lamb mince
180g diced onion
150g of diced carrot
25g of diced green pepper
1teaspoon or 2cloves of garlic
2teaspoon of flour
black pepper to taste
1teaspoon of butter
Ingredients for the pastry
1.2 kg flour
300 ml skimmed milk
seasoning - magi to taste
600 g butter
Instructions for the Ghanaian meat pie
1. Preheat your oven at a temperature of 180 °C/360 °F
2. Wash and dice your carrots, green pepper, and onion
3. Heat your mince lamb meat until sealed
4. Pour the meat into a bowl
5. Place the butter in a sauce pan on a low heat
6. Add your garlic and stir for about a minute
7. Add half of the dice onions and all the carrots into the pan.
8. Then gently add your 2 tablespoons of flour (this will keep the filling nicely bonded and to ensure that the filling is moist.
9. Stir for about 2-3minutes until they are mixed together.
10. Gently add your mince and the rest of the onion and the green pepper and seasoning to taste.
11. Now add the minced lamb meat and stir thoroughly for about 3-4 minutes
12. Sprinkle black paper to taste
13. Set the filling for the pie aside and prepare the dough
Preparation of the dough
1. Knead the dough very well
2. Roll the dough to achieve a thickness of about 5mm
3. Make round cuts or shapes of your choice from the rolled dough
4. Place a spoonful of the filling mixture onto the centre of each pastry.
5. Round and brush the edges with water.
6. Now fold over, encasing the filling to form small pasties.
7. Place your pastry on a baking sheet in the tray
8. Egg wash your pastry and leave in the preheated oven for 25mins until golden.
9. Drain on absorbent paper towels and garnish with herbs
Ready to serve
