Ingredients:
- 1 cup All-Purpose Flour
- ½ Tsp Baking Soda
- ½ Tsp Baking Powder
- ½ Tsp Ground Cinnamon
- ¼ Cup Vegetable Oil or Canola Oil
- ½ Tsp Pure Vanilla Extract
- ¼ Cup Brown Sugar
- 2-3 medium-sized Red Apples Peeled, cored and chopped
- 3-4 Tablespoons Maple Syrup
- ½ Tsp Cider Vinegar
- 2 Tablespoon Milk
- 10-12 Pieces Dried Cranberries
Method:
1) First, preheat your oven to 350°F and line a small muffin tin with cupcake liners.
2) Take 2-3 red apples, wash them, and pat them dry. Peel them and cut them in half. Core the center and chop them into small chunks. Keep aside.
3) In a separate medium-sized bowl take flour, baking soda, baking powder, ground cinnamon, and mix well. These are your dry ingredients. In the same bowl add canola oil or vegetable oil along with cider vinegar, vanilla extract, brown sugar, maple syrup, and chopped apples. Mix well. Add some milk and give it a good mix.
Make sure you have a lumpy cupcake like batter. Adding Milk and cider vinegar means you just made buttermilk at home.
4) Use an Icecream Scoop or a spoon to scoop out 2/3rd or 3/4th Portion of batter and pour it in the muffin tin lined with cupcake liners. Sprinkle some cranberries on the muffins and bake them in a preheated oven at 350°F for 18 to 20 minutes or until a toothpick comes out clean.
Enjoy!

cranberry apple muffins | plant-based
I used the recipe on the back of the bag of Decas Farms cranberry apple baker’s cut baking cranberries but I made it plant-based ‼️I bought this bag with my thrive market order to eat as a snack but then decided to try the recipe & I’m glad I did. Since I don’t have a professional mixer I mixed in the coconut cream by hand (the original recipe called for sour cream). It was a labor of love but well worth it because the muffins turned out so moist & delicious‼️
????1/2 stick plant-based butter (melted)
????Flax egg (1 tbsp ground flaxseed & 3 tbsp water mix and let sit ~15 minutes)
????2 cups flour (I used organic)
???? 1 tbsp baking powder
???? 1/4 tsp Himalayan pink salt
???? 1 cup sugar (I used organic cane sugar)
???? 1 tsp vanilla extract
????1 can coconut cream (use the solid part—I used the liquid for a smoothie ☺️)
???? 1 bag of Decas Farms cranberry apple
Bake at 350 degrees ~ 30 minutes
Yields 18 muffins
