Apple Cinnamon Crumb Muffins
Makes 18 Muffins
Prep Time: 15 minutes
Cook Time: 12-14 minutes
INGREDIENTS
- 2 cups all purpose flour
- 1 1/2 cups apple (about 2 apples)
- 1 cup buttermilk (see notes below)
- 1 large egg
- 3/4 cup dark brown sugar (packed)
- 1/4 cup butter (1/2 stick/unsalted/softened)
- 2 tsp pure vanilla extract
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/2 tsp salt
CRUMB TOPPING
- 1/2 cup flour
- 1/3 cup dark brown sugar (packed)
- 1/4 cup butter (1/2 stick/unsalted/softened)
- 1 tsp ground cinnamon
- 1/8 tsp salt
DIRECTIONS
1.) Preheat the oven to 400 degrees.
2.) Line your muffin tins with 18 liners (or butter the tins well) and set them aside.
3.) For the crumb topping...
Add all of the ingredients in a bowl.
Using a pastry cutter (or your hands), mix everything together until it looks like a thick crumbly paste. Set it aside.
4.) Peel and dice the apples into small pieces, and set them aside.
5.) To a bowl, add in the flour, baking powder, baking soda, cinnamon and salt.
Whisk together to combine, then set it aside.
6.) To a large bowl, add in the brown sugar and egg. Whisk together for one minute.
Add in the softened butter, and continue to whisk for another minute, then whisk in the vanilla until combined.
7.) Add in a third of the flour mixture, and begin folding it together. Then fold in half of the buttermilk. Add in another third of the flour mixture, then the other half of the buttermilk. Lastly, fold in the rest of the flour mixture.
8.) Before it’s all fully incorporated, add in the apples, and fold everything together until well combined. DO NOT over mix!
9.) Take the crumb topping, and add about 1/2 tbsp. to the tops of the batter, then evenly distribute any of the remaining crumb topping until it’s all used.
Gently press it onto the batter to help it stick.
10.) Bake for 12-14 minutes, or until a toothpick entered into the center comes out clean.
Allow them to cool slightly before serving.
NOTES:
- Make sure all your ingredients are at room temperature before you begin.
- I make homemade buttermilk for this recipe by adding 4 tsp. of apple cider vinegar to a liquid measuring cup, then I fill the cup up to the 1 cup line with whole milk. Stir and allow it to sit for 5-10 minutes. Or you can substitute it for a store bought one.
- I like to use a mix of Gala & Granny apples.
- Freezer instructions: Place the cooled muffins on a sheet pan and into the freezer to freeze. Once frozen, place them in a freezer bag, or airtight container to store. When ready to eat, put them into the microwave for about 20-30 seconds, or allow them to thaw on the counter at room temp.

OLD FASHIONED APPLE CRISP RECIPE
(makes 6 servings)
Ingredients:
Apple filling:
6 cups apple slices (700g)
1 tsp ground cinnamon
1 tsp vanilla extract
1/4 cup unsweetened applesauce (65g)
1 tsp cornstarch
1 tbsp maple syrup or agave (optional)
Topping:
1 cup rolled oats (90g)
1/4 cup ground oats or oat flour (25g)
1/4 cup finely chopped walnuts (30g)
1 tsp ground cinnamon
2 tbsp maple syrup or agave
2 tbsp melted coconut oil
NUTRITIONAL INFO:
232 calories, fat 9.2g, carb 36.8g, protein 3.3g
Preparation:
Half, core and thinly slice apples and transfer to a large mixing bowl.
Add the cinnamon, vanilla extract, applesauce, cornstarch and maple syrup (if using sweetener), and toss until apples are evenly coated.
Transfer the apples into a baking dish, cover with foil and pre-bake at 350F (180C) for 20 minutes.
While apples are baking, in a bowl, add the rolled oats, ground oats, finely chopped walnuts, cinnamon, maple syrup and coconut oil. Using a fork mix to combine.
Remove the foil, using a spoon stir the apples, sprinkle the oat topping all over (but do not press down), and place back in the oven.
Bake at 350F (180C) for another 20-25 minutes, or until the topping is golden brown.
Let it cool down for 15 minutes, then serve with a spoonful of Greek yogurt or coconut whipped cream on top.

Apple Cinnamon Crumble Dump Cake 3 WW Points per Slice! So Easy!
I created this recipe as another alternative to the Caramel Apple Crumb Cake. It is Delicious!!! All the ingredients should be super easy to find!
Ingredients:
Pillsbury Yellow Cake Mix (1 Box)
2 Cans Lucky Leaf Lite Apple Pie filling (20 oz Each)
3 Teaspoons of Ground Cinnamon
12 oz of Diet Soda
3 Quart Baking Pan
Pam or Canola Spray
Directions:
Preheat Oven to 350 Degrees
Spray your pan with Pam and pour in both cans of apples (spread evenly)
Sprinkle 2 Teaspoons of cinnamon all over the apples
Pour the entire of bag of cake mix on top of the apples and level out with a spoon
Pour 12 oz of the diet cream soda on top of the entire cake
Cover the Cake with Aluminum Foil and throw in the oven for 20 minutes
Remove aluminum foil and bake for about 40 more minutes (until top is brown)
Cut into 16 slices (it will thicken as it cools)
Only 3 Points per Slice/Serving
