1/2 c Sugar
1/2 ts Vanilla
2 Eggs
1 Graham-cracker crust,9"
Mix cream cheese, sugar and vanilla at medium speed with electric mixer until well-blended. Pour into crust. Bake at 350'F. for 40 minutes, or until center is almost set. Cool. Refrigerate 3 hours or overnight, Makes 8 servings. NOTE: You can also use lighter Neufchatel-type cheese. Variations: For chocolate, melt four squares of semi-sweet baking chocolate; add after eggs and mix until blended. For candy version, sprinkle 1 cup of chopped candy bars on top of cake before baking. For pumpkin, add 1/2 cup canned pumpkin, 1/2 teaspoons ground cinnamon and a dash each of nutmeg and cloves in the first step. Then add eggs and proceed as directed.

✅Ingredients (Mascarpone Cheesecake)
Crust
• 90g Almonds slices
• 70g Graham Cracker
• 20g Sugar
• 45g Butter melted butter
• Pinch of salt
Cheesecake
• 275g Mascarpone
• 475ml Heavy Whipping Cream
• 100g Sugar
• 10ml Vanilla Extract
• Lemon Zest ( Optional )
????Instructions
1️⃣Cheesecake Crust
1. In a Food Processor put the Graham Cracker, the Sugar, and the Salt
2. Pulse until the Graham Crackers are in a powder
3. Add the Sliced almonds and pulse until they are in small pieces but not a powder
4. Put everything in a bowl
5. Add the Melted Butter and mix
6. Put the crust in your 9inch Springform pan
7. Press on it so it coats the bottom evenly
8. Bake at 350°F for 15-20min
9. Let it cool down completely
2️⃣Cheesecake
1. Mix Mascarpone, Sugar, and Vanilla until the texture is smooth
2. In another bowl, whip the cream until it gets stiff peaks
3. Fold in the whipped cream in the Mascarpone mixture
4. Pour into the pan
5. Even it out
6. Let it 8h in the fridge
3️⃣Revealing The Cheesecake
1. Cut a nice slice of your cheesecake
2. Eat as it is or garnish with your favorite fresh fruits, coulis, or topping

100 ml Fresh full cream milk
1 Tbsp. lemon juice
1 tsp lemon zest (or lemon essence)
60g cake flour
20g cornflour
1/4 tsp salt

70g Castor sugar
Preheat oven to 200 degrees C, non fan forced mode
Bake at 200 degrees C for 20mins (oven temp will be around 180 because of water bath), then lower to 160 degrees C for 10 mins. Turn off the oven and leave the cake to finish cooking in closed oven for 30 mins. Open the oven door and leave the cake to cook in the oven with door ajar for 10 mins.
