How To make Zucchini Layered Meat Loaf
1 x Recipe Basic Meat Loaf; * 1/2 c Swiss Cheese; Shredded
1/2 c Zucchini; Thinly Sliced 2 tb Pimento; Chopped

Prepare the basic meat loaf :
except spread 1/3 of the mixture evenly in an ungreased loaf pan, 9 X 5 X 3-inches. Sprinkle half each of the cheese, zucchini and pimento in layers, spreading the layers to within 1/2 inch of all sides of the pan. Repeat the layers ending up with a layer of the meat mixture on the top. Be sure to cover the layers completely by spreading the mixture to the sides of the pan. Omit the catsup and bake, uncovered, for 1 1/4 hours. Drain off the excess fat and let stand for 5 to 10 minutes before slicing into thick slices. Serve on a heated platter. -----

???? Baked Zucchini Ingredients:
3 medium zucchini
1 small onion
4 large eggs
3/4 cup (100g) all purpose flour
1/2 cup (60g) grated parmesan cheese + 2 Tablespoons
1/2 cup (60g) bread crumbs
1 teaspoon instant yeast or baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon basil
4 tablespoons olive oil
???? Baked Zucchini Instructions:
1. Preheat oven to 350F (180C).
2. Cut the zucchini into thin slices and chop the onions. Add them to a large bowl. Add eggs, flour, parmesan cheese, bread crumbs, instant yeast, salt, black pepper, olive oil and chopped basil. Mix until incorporated.
3. Lightly drizzle some olive oil on a 8 x 8 inch baking dish and coat it well with brush. Pour the zucchini mixture and press down with a spoon. Add more parmesan cheese on top.
4. Bake for 55-60 minutes or until golden brown.
5. Serve it warm.

2 eggs, slightly beaten
2 cups shredded zucchini (1 large or 2 small)
1/3 cup Progresso® plain bread crumbs
1/3 cup chopped onion
1 teaspoon salt
1/2 teaspoon dried oregano leaves
1/4 teaspoon pepper
1 1/2 lb lean (at least 80%) ground beef
Topping
1 tablespoon packed brown sugar
2 tablespoons ketchup
1/2 teaspoon yellow mustard
DIRECTIONS
Heat oven to 350°F. In large bowl, mix all meat loaf ingredients until well blended. Press mixture into ungreased 9 1/2-inch deep-dish glass pie plate. Bake 35 minutes.
Meanwhile, in small bowl, mix all topping ingredients.
Remove meat loaf from oven; pour off drippings. Spread topping over loaf. Return to oven; bake 10 to 15 minutes longer or until thoroughly cooked in center and meat thermometer reads 160°F. Let stand 5 minutes before serving.

cover a baking sheet with baking paper and greased with oil
spread evenly over the baking sheet
bake for 30 minutes at 430°F 220°C
grated cheese 5 oz/140 g
bake for 15 minutes at 430°F 220°C

The zucchini roll is a simple, but tasty meal. The omelette in the oven will be much lighter, and you may decide to stuff the roll the way you like. In the summer it is also perfect in its cold version with cheese and ham!
INGREDIENTS
4 eggs
2 zucchini
50g of parmesan

200g of cooked ham
smoked cheese
PREPARATION
Whisk together the eggs, the salt, the pepper and the Parmesan. Add grated zucchini and combine the mixture well. Pour the mixture into a baking pan and bake for 20-25 minutes at 180 degrees. Remove from the oven and stuff with cooked ham and smoked cheese. Roll up gently and bake for another 10 minutes until the cheese melts. Serve hot!
