►1 Tbsp vanilla extract
►3 cups grated zucchini*, from 1 lb or 2 medium zucchini

Mix dry ingredients thoroughly. This way you will not get any baking soda pockets when baking.
Try adding some homemade butter onto the slices of zucchini bread.
Dry the zucchini if it's too wet. If you find that your zucchini is really wet, you can put it into a large bowl and pat the zucchini dry with some paper towel. Also, putting the graded zucchini in a strainer for a few minutes will help it drain out excess water.
Make sure the loaf pans are completely greased. When making a prepared loaf pan, that means making sure it is completely covered with butter or cooking spray so that the batter does not stick.
When making quick bread recipes, one of the most important thing is to pour the batter into prepared loaf pans.
Turn the healthy zucchini bread into zucchini muffins. You can make this recipe and put it into muffin tins instead of a loaf pan.
Let the bread cool completely before slicing. If you slice into a hot loaf, it can fall apart. Just take the loaf out of the oven and place it on a wire rack to cool for at least 20 minutes.
Omit the refined sugar and replace with honey or maple syrup for a more healthy zucchini bread.

HEALTHY ZUCCHINI BREAD RECIPE
1.75 cups white whole wheat flour
1/2 teaspoon kosher salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup coconut sugar
2 eggs
1/4 cup unsweetened almond milk
1/3 cup melted coconut oil
1 teaspoon vanilla extract
1.5 cup shredded zucchini, (1 large or 2 small zucchini)
1/2 cup chopped walnuts
INSTRUCTIONS
Pre heat oven to 350 Fahrenheit.
Grease a 9-inch loaf pan with coconut oil, butter or cooking spray.
Grate zucchini on the small holes of a box grater. Set aside.
In a large bowl, combine white whole wheat flour, baking soda, salt, cinnamon, nutmeg and coconut sugar.
In a medium bowl, combine eggs, coconut oil, unsweetened almond milk, and vanilla extract. Whisk together and then pour the wet ingredients into the dry and stir until everything is just combined and you have a nice thick batter.
Add the zucchini and walnuts to the batter and mix until evenly distributed.
Pour batter into prepared loaf pan and top with extra walnuts (if desired!).
Bake for 50 minutes or until set through and a toothpick comes out clean. Cool and enjoy!
Makes 12 slices.

INGREDIENTS
½ cup (119ml) vegetable oil
¾ cup (150g) packed brown sugar
¼ cup (50g) granulated sugar
2 large eggs
1 teaspoon vanilla extract
2 teaspoons cinnamon
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 ½ cups (186g) all-purpose flour
1 ½ cups (approximately 152g) shredded zucchini
INSTRUCTIONS
Preheat oven to 350°F. Grease an 8×4-inch or 9×5-inch loaf pan with nonstick cooking spray or butter.
Add oil, both sugars, eggs, and vanilla extract to a large bowl. Stir until smooth.
Mix in cinnamon, baking soda, baking powder and salt.
Stir in flour, mixture will be thick. Add zucchini and stir until combined – mixture will get looser and more pourable after stirring in zucchini.
Pour batter into prepared pan. Bake 50-60 minutes (9×5-inch pan) or 55-65 minutes (8×4-inch) pan, or until a toothpick comes out clean from the center of the loaf.
Cool before slicing or removing from the pan. Store covered for up to 2 days or freeze for up to 3 months.
