How To make Tiny Lemony Turnovers
1/2 c Softened butter
1/2 c Sugar
1 lg Egg
2 c Flour
1 ts Baking powder
1/2 c Part-skim ricotta cheese
1 tb Confectioners' sugar
1 tb Grated lemon peel
In large bowl with mixer at med speed, beat butter & sugar until light & fluffy; beat egg in well. At low speed beat in flour & baking powder until well blended. Flatten dough to disk shape; refrigerate, wrapped in plastic wrap, 1 hour until firm. Heat oven to 375. Work with half dough at a time; keep remainder refrigerated. Roll out to 1/8" thick between two sheets of wax paper or plastic wrap & cut into 2" squares. In small bowl stir in ricotta cheese, confectioners' sugar & lemon peel until smooth. Spoon 1 teaspoon ricotta mixture into center of half of dough squares; brush edges with beaten egg white. Top with remaining squares; using fork, press edges to seal. Brush with egg white; sprinkle with multicolored nonpareils. Bake 12-15 minutes. - -----

Kali ini saya akan kongsikan resepi epal turnovers versi mini menggunakan pastri homemade yang rapuh dan rangup. Intinya saya menggunakan gula perang untuk mendapatkan warna coklat gelap dengan rasa ala karamel. Sedap dinikmati ketika suam. Sesuai untuk sajian minum petang dan snek.

❤️BAHAN PASTRI :
250 gram tepung gandum | 2 cawan (dinginkan 30 minit)
10 gram gula icing | 1 sudu besar
250 gram mentega bergaram (sejuk dari peti sejuk)
80 ml ke 125 ml air ais | 1/3 cawan ke 1/2 cawan
❤️INTI EPAL :
6 biji epal hijau (potong kecil)
30 gram mentega bergaram | 2 sudu besar
60 gram gula perang | 1/2 cawan (saya pakai gula kelapa)
1 sudu besar jus lemon
1/2 sudu besar serbuk kayu manis
1/4 sudu teh garam
air tepung jagung : 1 sudu besar tepung jagung + 1/8 cawan air
❤️HIASAN :
Glis : 1 biji kuning telur + 1 sudu teh air
Gula pasir secukupnya
SUHU MEMBAKAR : 220℃ | 428℉ selama 15 ke 20 minit, atau sehingga keperangan. Guna api atas bawah dan bakar pada rak tengah. Panaskan ketuhar 15 minit.

Delicious and easy to make mini apple turnovers that you can make at home with homemade rough puff pastry. The pastry is flaky, buttery and crispy outside, with tender and rich apple filling. I used brown sugar to make the filling for additional caramel -like color and flavor. Enjoy these turnovers when they're warm during your tea time or as a grab to go snack.

Yield : 18 to 20 pcs
❤️PASTRY DOUGH :
250 grams all purpose flour | 2 cups (chilled 30 minutes)
10 grams powdered sugar | 1 tbsp
250 grams salted butter (use right away after out from fridge)
80 ml to 125 ml ice water | 1/3 cup to 1/2 cup
❤️FILLING :
6 Granny Smith apples (cut into small chunks)
30 grams salted butter | 2 tbsp
60 grams brown sugar | 1/2 cup (I used coconut sugar)
1 tbsp lemon juice
1/2 tbsp cinnamon powder
1/4 tsp salt
Thickener : 1 tbsp corn flour + 1/8 cup water
❤️TOPPING :
Egg Wash : 1 yolk + 1 tsp water
Granulated sugar
BAKING TEMPERATURE : 220℃ | 428℉ for 15 to 20 minutes, or till golden, top and bottom heat mode at middle rack. Oven preheated for 15 minutes.

how to make easy blueberry turnovers?
here's what you'll need:
Servings: 18 mini turnovers
Ingredients
450 g puff pastry store-bought 2 sheets thawed
2 tbsp turbinado sugar
1 Egg for egg wash, add tbsp water
Blueberry filling
2 cups blueberries fresh or frozen
3 tbsp sugar
1 Tbsp honey or maple syrup
½ tsp lemon juice
½ tsp lemon zest
½ tsp pure vanilla extract
¼ tsp cinnamon powder
Pinch of ground nutmeg
1 tbsp cornstarch
1 tbsp water
Instructions
In a saucepan over medium heat, combine blueberries and sugar. Simmer for 5 minutes until sugar dissolved. Add lemon zest, lemon juice, and honey. Simmer for another 5 minutes. Add cornstarch dissolved in water. Simmer until thickened. Turn off the heat. Add cinnamon powder, nutmeg, and vanilla. Mix until well blended. Set aside and let it cool.
Preheat oven to 400F. Line a baking sheet with parchment paper. Unroll the thawed puff pastry on a clean flat surface or large cutting board. Use a pastry cutter or paring knife to cut each puff pastry into 9 small squares.
In a small bowl beat egg and water. Lightly brush the half triangle edges of puff pastry with egg wash and spoon 3/4 tablespoon of blueberry filling on the center of puff pastry.
Fold into a triangle, use a fork and press the edges to seal. Brush the top of each turnover with egg wash. Sprinkle with turbinado sugar.
Use a kitchen scissor or paring knife, slit or snip the top of each turnover. Bake for 10 to 15 minutes until golden brown. Remove from the oven and let it cool.

these apple pastries are fun to make. moreish. serves 2 to 4. recipe written below.
1 sheet frozen puff pastry thawed
1 green apple peeled cored cut small into a bowl add
1 tea sp lemon juice
1 table sp apricot jam
mix gently til apple covered
2 table sp ground almonds or almond meal
1 table sp plain flour
1/4 tea sp cinnamon
mix then add
2 tea sp butter
rub between finger tips
then add to the apple
mix all together gently
quarter set aside
cut pastry into 4
filling in middle
cut 8 each side
cut both ends off
wrap around filling
cut the 8 each side in halves again
plat one side over then the other side over etc
to freeze place on tray uncovered freeze for 2 hours
then wrap in glad wrap seperate freeze up to 2 months
to cook the same day leave in fridge minimum 2 hours
pre heat oven 200 degrees c
brush milk over pastry
bake aprox 28 mins.....30 to 35 from frozen
dust icing sugar
serve cream or icecream
