How To make Tiny Cheese Cakes
1 whole vanilla wafer cookies
2 pkg ( 8 oz ea) no fat cream cheese
3/4 cup sugar
2 each eggs or egg substitute
Place vanilla wafer in bottom of paper muffin cup liner. Mix cream cheese, sugar, eggs. Garnish with red cherry or green and red candied cherries for Christmas.
Pour into muffin cups. Bake 15 min at 375 degrees.

1/4 tsp salt
5 tbsp (70g) unsalted butter, melted
Filling:

1 tbsp (15ml) lemon juice
1/2 tbsp (3g) lemon zest
1/2 tbsp (7ml) vanilla extract
Topping:
1/2 cup (100g) granulated sugar
1 tbsp (7.6g) corn starch
1/4 cup (60ml)
1 cup (250g) frozen raspberries

They are usually baked using a spring form round pan using baine marie method, or simply with a water bath. But this version made everything simple! I tried making a 'mini' and 'super mini' bite size pieces so that more people could enjoy it. It's very convenient to prepare, to carry and to eat! You can also give them as a treat to your friends and loved ones still looking beautiful and perfect. This recipe is very creamy and rich with just the right sweetness. A perfect balance of the creamy cheesecake, graham crust and fruity blueberry topping!
Ingredients:
CRUST:
2 cups crushed graham
1/2 cup (1 stick) melted butter
3 tablespoons sugar
CHEESECAKE BATTER:
2 bars of 250 grams cream cheese
1 cup sugar
1 cup heavy cream
2 large eggs
1 tsp vanilla
1/2 tsp salt
TOPPING:
1 can 21 oz Blueberry pie filling and topping

- 400 g Philadelphia Cream Cheese ( 14 ounces )
- 200 g unsweetened Yogurt ( 7 ounces )
- 150 g Sugar (3/4 cup)
- 2 Eggs
- Grating of Lemon Zest
- 1 tsp Vanilla
- 20 g Flour ( 2 tbsp )
Bake for 15 minutes!
● 5 minute No Bake Mini Cheesecakes:
- 400 g Philadelphia Cream Cheese ( 14 ounces )
- 200 g Heavy Cream ( 7 ounces )
- 100 g Sugar ( 1/2 cup)
