How To make Strawberry Carrot Cake
2 1/2 c All purpose flour
1 1/4 c Packed brown sugar
1 c Carrots; finely shredded
1/2 c Vegetable oil
1/2 c Yogurt; low fat, plain
1/3 c Water
1/2 c Pecans; chopped
2 ts Baking powder
1 ts Ground cinnamon
1 ts Ground nutmeg
1/2 ts Baking soda
1/2 ts Salt
2 Eggs
1 c Strawberries; finely
-chopped 1 Strawberry cream cheese
- Glaze recipe Heat the oven to 350 degrees. Grease and flour 12 cup bundt cake pan. Beat all ingredients except strawberries and Strawberry Cream Cheese Glaze in a large bowl on low speed for 45 seconds, scraping bowl, constantly. Beat on medium speed for 2 minutes, scraping occasionally. Fold in strawberries; pour into prepared pan. Bake 45 to 55 minutes or until a wooden pick inserted in center comes out clean. Cool 5 minutes; remove from pan. Cool completely on a wire rack. Prepare Strawberry Cream Cheese Glaze; spoon onto cake. Refrigerate any remaining cake.

This Strawberry Cake is just about the quickest and easiest cake you will ever make. Loaded with 500g / 1 lb of strawberries IN and ON the cake, it's a great way to use strawberries when they're in season! Yogurt makes the crumb moist, it's not too sweet and you'll love the hint of lemon.
No stand mixer, no creaming butter. Just one bowl and a wooden spoon!

2 1/2 CUPS SUGAR
4 EGGS
2 TSP. VANILLA
1 CUP COOKING OIL
1 1/2 TSP. CINNAMON
1/2 TSP. GROUND GINGER
2 1/4 CUP SELF-RISING FLOUR
1 CUP CHOPPED PECANS
3 CUPS CARROTS (PEELED & GRATED)
1 SMALL CAN CRUSHED PINEAPPLE
1/2 CUP GOLDEN RAISINS (TOSS IN FLOUR)
In a bowl combine sugar, eggs, vanilla and mix well. Add cooking oil & spices. Add flour mix until blended. Add pecans, carrots, pineapple & raisins. Mix on medium speed for 1 minute after adding all ingredients. Pour into 2 well-greased 9” round cake layers. Bake @ 325 degrees until golden brown and set. (About 1 hour). Remove from oven place on wire racks to cool. Cool 15 minutes before flipping out onto parchment paper. Ice with Cream Cheese Icing if desired

1 STICK SALTED BUTTER (ROOM TEMPERATURE)
8 OZ. CREAM CHEESE (ROOM TEMPERATURE)
4 1/2 CUPS POWDERED SUGAR
1 TSP. VANILLA FLAVORING
1 TBSP. EVAPORATED MILK
Using an electric mixer and mixing bowl, mix butter and cream cheese until creamy. Add powdered sugar 1/2 cup at a time. After adding 2 cups of the powdered sugar, addmilk, and vanilla. Continue adding remaining powdered sugar. Turn mixer to high and fluff frosting for 1 minute.

Carrot Cake – Bruno Albouze
Here is the ultimate carrot cake. Check this out: the sponge is made with a mixture of pre-cooked grated carrots in orange juice, and flambéed pineapples; incredibly moist. Then the cake is carefully layered and topped with a luscious Italian meringue based vanilla buttercream-cheese. The cake is decorated with small cubed of orange-carrot jelly. That bomb!.. This recipe is inspired by Pastry Chef Gregory Doyen.
