Ingredients:
1 block cream cheese
3 tbs butter
1/4 cup diced onions
3 tbs green onions
1/4 cup diced celery/diced bell red bell pepper
1-2 tbs minced garlic
1/4 cup sherry wine (optional)
8 oz lobster meat (can sub shrimp)
1 lb crab meat (lump or claw)
1/3 cup sour cream
2 tbs lemon juice
8 oz cheddar jack cheese
8 oz parmesan cheese
4 oz sharp cheddar (to top)
Salt, pepper, onion powder, creole seasoning
Hot sauce (to taste)
2 tsp Worcestershire
Parsley to garnish
Directions:
Pre-heat oven to 375. Prep veggies.
Begin by melting butter in cast iron skillet. Add onions and celery (and bell pepper if you have it) and cook thru. Add garlic once onions are done cooking. Now add your lobster or shrimp and cook thru. Add sherry wine (optional) and cook off about 2 minutes. Next, Add in your cream cheese and melt/incorporate. Add lemon juice, green onion, Worcestershire, hot sauce, and sour cream - mix to combine. Begin seasoning at this point and taste as you go. Add in crab meat and mix to incorporate.
Turn the heat to low and slowly mix in your cheese until everything is melted. Adjust your seasoning here to your preference, and top with your remaining cheese.
Place in a 375 degree oven for 15-20 minutes or until the top is browned and dip is hot/bubbly. Garnish with parsley and any remaining crab meat (and/or lobster/shrimp) for presentation. Serve with crackers, tortilla chips, or toasted baguettes.

Creole Shrimp Dip Recipe
- 1lb Raw gulf shrimp chopped
- 2 Tablespoons Butter
- 4-5 cloves of Garlic minced
- 1 Tablespoon Parsley
- 1 Tablespoon Creole Seasonings
- 1/4 cup White Wine
- 2 Tablespoons Lemon Juice
- 8oz Cream Cheese
- 8oz Shredded Colby Jack
- 8oz Shredded Mozzarella
- 4oz Grated Parmesan Cheese
- 1/2 cup Sour Cream
- 1/2 cup Mayo
- Green Onion or Parsley for garnish
Directions:
1. Prepare charcoal grill for two zone cooking.
2. Melt butter over direct heat side of grill in a cast iron skillet. Add chopped shrimp & garlic and sauté for 2-3 minutes until pink stirring occasionally.
3. Stir in white wine and lemon juice. Season with Creole seasoning to taste.
4. Transfer shrimp mixture to a large mixing bowl and add cream cheese, Colby Jack, Mozzarella, Parmesan, Sour Cream, and Mayo. Stir to combine.
5. Spread mixture into cast iron skillet and cook over indirect side of grill until hot and bubbly about 15 minutes.
6. Garnish with finely chopped green onion and additional Creole seasoning. Serve with toasted baguettes.

Spicy Shrimp Dip — Big Game Day Recipe!
This Spicy Shrimp Dip makes a great appetizer for that upcoming Big Game Day Party. This has instantly become one of my favorite smoked appetizers!
Ingredients:
1 Pound Cooked Shrimp — chopped and cooked in pan beforehand with a tablespoon of chili powder and and tablespoon of oil.
1/4 White Onion, 1 Red Bell Pepper, and 2-3 cloves of garlic - all chopped/diced and sautéed beforehand.
1/2 Fresh Lemon for the juice.
1 Tbsp Worcestershire Sauce
4oz cream cheese
1/4 cup fresh shredded Parmesan
3/4 cup fresh shredded Mozzarella
Salt & Pepper to taste
Chopped Green Onions as a topping.

Nam Prik is a type of Thai dip that is spicy (prik means chilies!) with very bold flavours. It's served as part of a bigger meal, and for many families, a meal isn't quite complete without a nam prik on the table!
Restaurants shy away from putting nam prik on the menu because they can be a bit of an acquired taste, but the one I am sharing with you today is what I consider a beginner's nam prik because it is easy to make and easy to love with very simple ingredients.
