A no bake rocky road cheesecake with a rocky road base packed full of chocolate, cherries, marshmallows and hazelnuts, coconut cheesecake and rocky road topping.
Ingredients
Chocolate Base
480g dark chocolate
175g chocolate cookies (any kind will do)
1 ½ cups mini marshmallows, plus extra to serve
½ cup glacé cherries
½ cup roasted hazelnuts
Cheesecake
¼ cup boiling water
2 tsp gelatine powder
500g cream cheese, softened
2/3 cup caster sugar
1/3 cup desiccated coconut
3 tsp vanilla extract
Toppings
2 cups thickened/whipping cream
125g punnet raspberries, plus extra to serve
½ cup chocolate sauce
Mini pink and white marshmallows, to serve
2 tablespoons chopped pistachio kernels
Steps
Chocolate Base
Grease a 22cm round (base) springform pan. Line base and side with baking paper.
Place dark chocolate in a microwave-safe bowl. Microwave on HIGH (100%), stirring every 30 seconds, for 1 minute 30 seconds or until chocolate is melted and smooth. Cool for 15 minutes. Add cookies, marshmallows, cherries and hazelnuts. Press biscuit mixture into base of prepared pan, pressing firmly to compact. Chill in the fridge for 30 minutes.
Cheesecake
Place boiling water in a small heatproof jug. Sprinkle over gelatine. Stir until gelatine dissolves. Cool for 5 minutes.
Using an electric mixer, beat cream cheese, sugar, coconut and vanilla until light and fluffy. Gradually add cream, beating until mixture thickens slightly. With motor operating, add gelatine mixture, beating until just combined. Pour mixture into pan. Level top. Refrigerate for 6 hours or until set.
Place remaining chocolate in a microwave-safe bowl. Microwave on HIGH, stirring every 30 seconds, for 1 minute or until chocolate is melted and smooth. Transfer cheesecake to a serving plate. Top with extra whipped cream, marshmallows and raspberries. Drizzle with chocolate sauce and pistachios. Serve.

Turn your favorite ice cream flavor into pie!
DIRECTIONS
1. Make filling: In a large bowl, combine cream cheese, sugars, cocoa powder, melted chocolate, and salt. Beat with a hand mixer until smooth. Gradually add heavy cream and beat until stiff peaks form.
2. Pour into prepared graham cracker crust. Refrigerate until set, about 2 hours.
3. Cover top of pie with marshmallows and almonds. Broil, until toasted, about 1 minute.

1/4 cup brown sugar
2 tbsp. cocoa powder
1/2 c. chocolate chips, melted (plus more for drizzling)
pinch of salt
1 1/2 c. heavy cream
1 1/2 c. mini marshmallows
1/2 c. chopped almonds

Hello my Friends!
I can't believe it's the end of Summer, so why not Summer with a creamy, delicious, nutty, and chocolaty No Bake Rocky Road Cheesecake!
1 (8 oz) package Cream Cheese, softened
1 (14 oz) can sweetened condensed milk
1/4 cup vanilla milk (whole milk with 1/8 tsp vanilla extract)
2 oz semi-sweet chocolate, melted
1/2 cup fresh whipped cream
2/3 cup mini marshmallows
1/3 cup peanuts
2 oz semi sweet chocolate, chopped
1 (9 inch) chocolate graham cracker crust
In a large bowl, add cream cheese and cream until fluffy; add sweetened condensed milk and blend until well combined. Next add milk and blend it in (Do not Overmix). Beat in melted chocolate. Fold in whipped cream, peanuts, chopped chocolate, and marshmallows. Pour cheesecake batter into graham cracker crust...Place in the refrigerator overnight until chill and firm. Serve with whipped cream.
