Fridge Cake (with Maltesers, Cookies, Pistachios & White Chocolate)
Fridge cake (also known in some places as Tiffin) originates from Scotland. It looks similar to rocky road, but doesn't have any marshmallows. The great thing about fridge cake is that you can literally add whatever fillings you like.
INGREDIENTS
100g dark chocolate
300g milk chocolate
100g cookies (any kind - I used Ballerina which a double cookie with a filling)
100g Maltesers
30g salted pistachios
30g white chocolate
TOPPINGS
A couple of extra cookies and Maltesers to sprinkle over the top
DIRECTIONS
1. Melt the chocolate together. I used a Bain Marie, but you could use the microwave, if you prefer.
2. In a large bowl, chop up the cookies, half of the Maltesers (leave the rest whole), and the white chocolate. Add in the pistachios, and give it all a good stir.
3. Pour the chocolate into the bowl and stir until everything is evenly combined.
4. Prepare a medium-sized loaf tin with foil and pour the chocolate mixture in, smoothing to make it even. Sprinkle some cookies and Maltesers over the top, gently pushing them down so that they adhere to the chocolate.
5. Leave in the fridge for a couple of hours, and then slice with a sharp knife that has been run under the hot water tap beforehand.

Woman goes viral for her festive rocky road recipes
An Australian woman has gone viral on TikTok after sharing her decadent rocky road recipes for a perfect Christmas treat or gift.
Celia Gercovich, from Ballarat, shared two videos showing her own recipe for her delicious version of rocky road with chocolate, red frog lollies, scotch fingers, marshmallows and TimTams that have collectively racked up more than 8million views.
In her first video, Celia makes her four ingredient rocky road by mixing chopped up red frog lollies, marshmallows, and scotch finger biscuits with melted dairy milk chocolate.
'This is my version and it is delicious – four ingredients and you’ve got the best slice ever,' the foodie said.
She then puts it in a circular cake tray with baking paper on the bottom, drizzles over a bit more melted chocolate, presses the mixture down to get rid of gaps and smooth the top and places it in the fridge for a few hours to set.
Celia's recipe took TikTok by storm gaining more than 3.1 million views in only a week so she made a second video in response, incorporating an extra ingredient viewers suggested.
'Someone in the comments mentioned about adding TimTams and I thought that's a great idea,' she starts the clip.
Celia repeated the original recipe adding chopped up double-coated TimTams and sprinkled a few extra crumbs over the top before putting it in the fridge to set.
'I do chop everything up quite small because I feel like I like my rocky road so that when you have a bite of it you’ve got a little bit of everything,' she advised.
In another clip, Celia shows how she cuts up the set rock road slice into bite sized pieces.
'It doesn't have to be perfect rocky road doesn't look neat and tidy,' she said.
The Ballarat woman also asked her followers what confectionary she should add to her recipe next with people suggesting Clinkers, Turkish delight, Maltesers and Oreos.

90g salty pretzels, whizzed
25g melted butter
2 tbsp Golden Syrup (or corn syrup or honey)
For the sponge
120g buttermilk
120ml cold coffee
110ml vegetable oil
1 lg egg
140g plain flour
185g caster sugar
35g cocoa powder
1/2 tsp bicarbonate of soda
1/4 tsp salt
For the 'Nougat' Filling
25g butter
100g caster sugar
30ml evaporated milk
100g Marshmallow Fluff spread
1 tsp vanilla extract
a drop or two of pink food colouring

2 tbsp Golden Syrup (or honey, or corn syrup)
