Peanut Butter Rocky Road Fudge
Peanut Butter Rocky Road Fudge Recipe courtesy of Chris Alicki
3 cups of milk chocolate
1 cup of walnuts
¼ cup of peanut butter
6 cups of miniature Marshmallows
Method:
Over a double boiler in a large bowl heat the chocolate and peanut butter until melted and there is no trace of peanut butter left.
Add the nuts and marshmallows and remove from the heat immediately. Mix until combined and that all of the marshmallows is covered with chocolate.
Line a 13 x 9” pan with aluminum foil including the all the sides. Pour mixture into the pan and spread the mixture evenly.
Cover the pan with aluminum foil and refrigerate for 2-3 hours. Lift fudge out of pan by lifting out the foil. Then you can you pull the foil away from the sides and cut the fudge into 3 inch squares. Keep refrigerated covered up to 2 weeks.
Yield: about 30 squares.

Some of you may know I am not a fan of marshmallows, but this? THIS I was a huge fan of. It was VERY good, very easy, and the nurses loved them!!!
2 cups dry roasted peanuts
7 cups mini marshmallows (10 ounce bag)
2 cups semi-sweet chocolate chips
2 tablespoons butter
Line a 9 x 13 pan with parchment paper.
Place peanuts and marshmallows in a large mixing bowl, toss to mix them up. Set aside.
In a 4 cup microwaveable measuring cup or bowl, add chocolate chips and butte. Microwave on high for 60-90 seconds, remove and stir then microwave again for another 60-90 seconds. remove from microwave and stir until chocolate chips are completely melted. Let cool for 5 minutes then stir into marshmallows/peanuts until all are coated.
Spread into prepared pan and chill for 2 hours in refrigerator. Cut into squares

Easy peanut butter microwave fudge
You can make delicious peanut butter fudge in your microwave with only 4 ingredients! You will need the following ingredients:
16oz powdered sugar
1c peanut butter(any brand)
2tbs butter(I used margarine)
1/3c milk
Add powdered sugar to mixing bowl, add 1/3c milk, and 2tbs butter(margarine). Microwave ingredients 2mins on high. Remove and mix ingredients until smooth. Microwave an additional 30secs. Remove and add 1c peanut butter. Mix until smooth. Line an 8x8 pan with foil. Spread peanut butter mixture in pan. Distribute evenly. Refrigerate at least 1hr. After 1hr, remove from pan. Cut fudge into 1 inch pieces. Yield about 36 1 inch pieces. Your delicious peanut butter fudge is now ready to serve. Enjoy!
