2 Minute Rocky Road Fudge – Easy, No-Fail - The Hillbilly Kitchen
No-Fail Rocky Road Fudge in 2 Minutes Only $2 per Pound Just Like Gift Shop Fudge. This fudge is incredibly easy to make and has a rich creamy indulgent flavor with the perfect blend of sweet salty. The creamy fudge, crunchy nuts and fluffy marshmallows create an unmatched incredibly satisfying texture and flavor.
It is exactly like gift shop fudge which sells for $10 to $20 per pound depending on where you are shopping. You can make this for about $2 per pound and it literally only takes about 2 minutes. It is perfect for gift giving, something quick to take to an office party, holiday get together, potluck or hostess gift. No one will have any idea it was so easy to make.
This is a kid friendly recipe. There is nothing hot enough to cause a burn and it doesn’t require a long attention span.

Ingredients:
14 ounces Sweetened Condensed Milk
12 ounces Semi-Sweet Chocolate Chips
1 ½ cups Peanuts (Cashews, Pecans, Walnuts, Almonds…)
2 to 4 cups Mini Marshmallows
2 tablespoons Butter
1 teaspoon Vanilla

INGREDIENTS:
Vanilla Ice Cream
-1 ½ scoops Quest® Vanilla Milkshake Protein Powder
-1 cup 2% milk
-1 cup unsweetened almond milk
-1 vanilla bean pod
-¼ cup zero-calorie sweetener, powdered
-1 egg yolk
Chocolate Chip Cookie
-1 scoop Quest® Chocolate Milkshake Protein Powder
-1 scoop Quest® Multi-Purpose Mix Protein Powder
-1 Rocky Road Quest Bar®
-½ cup zero-calorie sweetener
-1 egg
-4 tablespoons butter, softened
-3 tablespoons almonds, chopped
-2 ½ tablespoons sugar free chocolate chips
-2 tablespoons unsweetened cocoa powder
-1 tsp vanilla extract
-¼ teaspoon salt
-½ teaspoon baking soda
-1 teaspoon hot water
-¾ cup oat flour
INSTRUCTIONS:
Ice Cream
1. Prepare a medium bowl and place a strainer inside. Keep this close by while you make the ice cream base.
2. In a mini blender process the sweetener into a powder. Separate the yolk from the egg. Combine the yolk and the sweetener in a medium-mixing bowl. Whisk until smooth and mixture resembles a pale lemon-yellow color.
3. In a small pot, add milk with the vanilla (pod and seeds) and bring to a simmer.
4. Remove simmered milk from stove and slowly pour about ¼ cup into the egg-sweetener mixture while whisking. This warms the eggs and prevents them from curdling in the next step.
5. Pour milk and egg yolk mixture back into pot and heat on low-medium heat, stirring frequently to prevent yolk from scrambling.
6. Remove from heat and whisk in the Quest® Protein Powder. Whisk until mixture is smooth.
7. Strain the ice cream base into the bowl, which will remove the vanilla pod and any bits of egg that may have accidentally curdled.
8. Pour ice cream mixture into an ice cream maker and let churn for 15-20 minutes.
9. Remove ice cream from machine, place in an airtight container, covering the top of the ice cream with parchment or plastic wrap to ensure no ice crystals form on top, and freeze for about 2-3 hours.
Rocky Road Cookie
1. Preheat oven to 350°F.
2. Blend Quest Bar® into a powder.
3. Cream together the butter, sweetener, and powdered Quest Bar® until smooth.
4. Beat in the egg, then stir in the vanilla, baking soda, salt and water.
5. Stir in oat flour, Quest® Protein Powder, almonds and sugar free chocolate chips.
6. Spray four 6-inch skillets with baking spray. Divide cookie dough mixture equally into four. Press mixture into skillets.
7. Bake for 7-8 minutes.
Assembly
1. Once ice cream is ready, scoop two scoops of ice cream onto each freshly baked cookie pizza.
2. Serve immediately.

How to make rocky road cookie pizza - An easy dessert recipe
Chocolate chip cookie dough, nuts, marshmallows-they're all our favorite food groups. And if you put them together and bake them in a pizza pan, you just may have the perfect dessert. Pillsbury's Lauren Chattman whips up a rocky road cookie pizza that's fun and delicious, any way you slice it.
Recipe: How to make a rocky road cookie pizza
1. Heat oven to 350°F.
2. Grease 12-inch pizza pan with shortening or cooking spray. In pan, break up cookie dough. With floured fingers, press dough evenly in bottom of pan to form crust.
3. Bake 12 to 17 minutes or until light golden brown
4. Sprinkle marshmallows, peanuts and chocolate chips evenly over crust. Drizzle with caramel topping.
5. Bake 8 to 10 minutes longer or until topping is melted. Cool completely, about 1 hour 15 minutes. Cut into wedges.
