ROCKY ROAD CANDY
Line a 13X9 baking pan with lightly buttered foil, wax paper, or parchment paper. Set a side.
1 (10 or 12 ounce) package bittersweet chocolate chips or semi-sweet chocolate chips
2 tablespoons salted or unsalted butter, cubed
1 (14 ounce) can sweetened condensed milk
2-1/2 cups lightly salted dry-roasted peanuts, or substitute with pecans, walnuts, or mixed nuts
1 (16 ounce) package miniature marshmallows
1. Add chocolate chips and butter into a large microwave-safe bowl. Microwave on defrost for 30 seconds. Stir. Microwave an additional 30 seconds. Stir. If chocolate chip have not melted microwave an additional 15-30 seconds. The residual heat will continue melting the small bits of chocolate.
2. Stir in sweetened condensed milk until glossy and smooth.
3. Add peanuts and marshmallows. Stir until well coated.
4. Pour evenly into prepared baking dish.
5. Refrigerate, uncovered, for 1-2 hours or until chocolate has set.
6. Remove from baking pan. Cut into desirable squares.
TIPS: Store in an airtight container up to 2 weeks in the refrigerator.

150g (5.2 Ounces) - Dark Chocolate Chips
120g (4.2 Ounces) - Unsalted Butter
2 Tbsp (45g) - Golden Syrup

How to Make Rocky Road Fudge Dessert

This fudge is something that my mom used to make every Christmas and I remembered how simple it is- no oven needed, just a microwave and some mad stirring skills! The kids loved being in on the action and helping with every step of the recipe.

Packed with marshmallows, nuts and white chocolate, this might be the easiest and most addictive holiday treat ever.
INGREDIENTS
•800g white chocolate
•250g unsalted butter
•½ cup corn syrup
•3 tsp pure peppermint extract
•300g mini marshmallows
•1 ¼ cups Christmas-coloured candies (+ extra for topping)
•½ cup macadamia nuts
•candy cane and gingerbread man icing decorations
LET'S GET COOKING...
1.Place the white chocolate, butter and corn syrup in a pot over medium-low heat. Stir consistently until completely melted. Don’t worry if the chocolate and butter have separated.
2.Remove from the heat, and stir the mixture with a spatula or a whisk until the chocolate and butter have fully combined. Add the peppermint extract and allow to cool slightly. Add the macadamia nuts, Christmas-coloured candiesand marshmallows and mix until just combined. Pour the mixture into a square aluminum container, and sprinkle some extra candies and cute icing decorations (mine look like candy canes and gingerbread men) on top. Cover with aluminum foil and place this in the freezer until set.
3.Slice the rocky road into bite-sized squares, and you’re done! Note: Beware, you will eat this so quickly without realizing it – this is probably the most addictive dessert I’ve ever made! It’s SO good!
