OMG so good! Best Rocky Road Recipe EVER!
Ingredients: 300g Milk or Dark Chocolate 150g Extra Chocolate 100g Marshmallows 100g extras like dried fruit and nuts etc but I like Glacé cherries, sultanas and choc chips 125g Butter or Margarine 3 tbsp Golden Syrup 170g biscuits or cookies
Method: Heat 300g chocolate with butter and syrup until smooth - heat on low Turn off the heat, stir in biscuits, marshmallows and extras pour into a lined tin, then smooth - approx 8x12 inches Pour the optional 150g melted chocolate over the top and smooth it out Refrigerate for at least 2 hours before cutting Store covered and away from strong smelling foods in the fridge
Chef John's Rocky Road - Food Wishes
I always thought Rocky Road candy was named after the ice cream, but that’s not the case. Apparently, it appeared in Australia back in the late 1850’s, and that’s what inspired the ice cream. There’s a lot of controversy as to who was responsible for this candy-to-frozen-dessert conversion, but there’s no debating the fact that chocolate, marshmallow, and nuts are a fantastic combination, no mater the delivery system. It's squishy, it's chewy, it's crunchy and it's colourful! It's the Rainbow Rocky Road and it is SOOOOO easy you could do it with your eyes closed (but don't try that , obvs)
600g white chocolate 200g mini marshmallows 90g dessicated coconut, toasted (in an oven for 5 mins at 180C is fine) 3/4 pack of Oreo cookies (about 9 cookies) 150-200g caramelised/toffee popcorn (homemade or from a packet!) Extra 150g white chocolate Candy colouring in various colours
