Ingredients
1/2 cup 125g popcorn kernels to create 3 cups of cooked popcorn
250g milk chocolate
Pinch of Salt
400g mini marshmallows
170g dried or glace fruit such as glace cherries, craisins or dried blueberries
Sprinkles to decorate

It's squishy, it's chewy, it's crunchy and it's colourful! It's the Rainbow Rocky Road and it is SOOOOO easy you could do it with your eyes closed (but don't try that , obvs)
600g white chocolate
200g mini marshmallows
90g dessicated coconut, toasted (in an oven for 5 mins at 180C is fine)
3/4 pack of Oreo cookies (about 9 cookies)
150-200g caramelised/toffee popcorn (homemade or from a packet!)
Extra 150g white chocolate
Candy colouring in various colours

Recipe here: Stephanie Jaworski of Joyofbaking.com demonstrates how to make Rocky Road. If I was going to be stranded on a desert island, and could take only one candy, Rocky Road would be my choice. I know that Rocky Road can mean different things to different people, depending on where you live, but for me it's white chunks of soft and spongy marshmallows together with crunchy nuts, all covered in a rich dark chocolate.

Food editor Silvana and her family love Halloween. But like most of us, they’re staying home instead of trick or treating this year. So they’re making these rocky road squares decorated with vampire faces for a spooky treat.
These no-bake, easy-to-make squares are jam-packed with great texture, using popcorn, mini marshmallows and jelly sweets instead of the traditional biscuit. Silvana and her daughter Cassia have gone for a vampire design but you could also make a spider, using the chocolate button as the body of and the strawberry laces as its legs.
Ingredients:
½ tbsp sunflower oil, plus extra for greasing
100g unsalted butter, cubed
1 tbsp golden syrup
300g milk chocolate, broken into pieces
150g dark chocolate, broken into pieces
30g popcorn maize
80g jelly sweets, such as Teeth & Lips and Fizzy Watermelon Slices
50g essential Mini Pink & White Marshmallows
16 large chocolate buttons
1 tbsp milk chocolate chips
Edible eyes, white writing icing, and strawberry laces, to decorate

----ROCKY ROAD BARS----
This no-bake dessert bar ROCKS our world!! Have fun experimenting with the “crunchy bits”- we like using peanuts and salted pretzels but try graham crackers, chow mien noodles, almonds, potato chips- you name it- it’ll taste delicious!
Stuff you’ll need:
Bowls
Spatulas
Measuring cups
Heavy bottom pot and a stainless steel bowl
9x13 baking pan
2 cups of chocolate chips
1/3 cup of salted butter
3/4 cups of peanut butter
2 cups of crunchy bits - we like using 1 cup of peanuts and 1 cup of salted pretzels
1 bag of mini marshmallows
1) Spray and line a 9x13 pan with parchment paper.
2) Take a heavy-bottomed pot and fill it 1/4 of the way with water.
3) Put the pot on the stove and bring the water to a simmer.
4) Grab a stainless steel bowl and add to it your butter and peanut butter.
5) Set the bowl on top of the pot that has been simmering on the stove.
6) Remove your bowl once your butter has completely melted.
7) Add your chocolate chips to the bowl and begin to stir, melting the chocolate chips.
8)In a separate large bowl, mix your crunchy bits with your mini marshmallows.
9) Pour your melted chocolate chip mixture over your marshmallows and stir to combine.
10) Empty the bowl into your prepared pan and spread out to form an even layer.
11) Place pan into the fridge and let set for 1 hour before slicing into bars! You ROCK!
