2-3 large ripe bananas, mashed will equal to around 1 cup (approx. 8 oz.)
1-3/4 cups (210 grams) all purpose flour
1/2 tsp. baking soda
2 tsp. baking powder
1/4 tsp. salt or a pinch
1/3 cup (2.6 oz.) softened butter
2/3 cup (133 grams) granulated sugar
2 eggs, room temperature
2 tbsp. milk, room temperature
1/2 cup (64 grams) chopped walnuts for batter + 1/4-1/2 cup walnuts for topping
1 tbsp. quick oats for topping (optional)

????Ingredients List for your convenience:
Dry Ingredients:
1-1/2 cups all purpose flour
1 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt or a pinch
1 tbsp. pumpkin pie spice (make your own by combining cinnamon, all-spice, cloves, nutmeg, and ginger)
Wet Ingredients:
1/2 cup olive oil - coconut oil, or canola oil work well too
1 cup granulated sugar - you can use 1/2 cup light brown, and 1/2 cup regular sugar
1 tsp. vanilla extract
(1) 15 oz. can of pumpkin puree (you can make your own at home using fresh pumpkin too)
3 eggs at room temperature
Homemade Pumpkin Pie Spice
3 tbsp ground cinnamon
2 tsp ground ginger
2 tsp ground nutmeg
1 tsp ground allspice
1 tsp ground cloves
Mix them all up and you have your own pumpkin pie spice

How to make healthy pumpkin banana bread. Pumpkin bread from scratch.
Hi there! I hope you are all doing well! I want to share this healthy and easy recipe for pumpkin banana bread. I make it with whole wheat and honey. It does have a small amount of brown sugar as well. I promise this bread is delicious.

Banana Pumpkin Bread
2 large, ripe bananas
1 cup (250 grams) pumpkin purée
4 tablespoons (56.7 grams) unsalted butter — softened
2 tablespoons (35 grams) Greek plain yogurt or sour cream (30 grams)
1/4 cup (55 grams) brown sugar
1 teaspoon (4 grams) vanilla extract
1/3 cup(113 grams) honey or maple syrup
2 large eggs at room temperature
1 1/2 cups (180 grams) whole wheat flour
1 teaspoon (4 grams) baking soda
1/2 teaspoon (3 grams) baking powder
1/2 teaspoon (3 grams) salt
1 teaspoon (3 grams) cinnamon powder
1 teaspoon (2 grams) ground ginger
1/4 teaspoon (0.5 grams) nutmeg
1/4 teaspoon (0.5 grams) ground cloves
1/2 cup (60 grams) chopped walnuts or pecans or chocolate chips (85 grams) — optional
Heat your oven to 325°F (160° C).
Lightly grease a bread loaf pan (8.5x12.5x2.5 inches - 21.5x31.7x6.3 cms).
Place the bananas in a bowl and mash. Add the pumpkin purée, butter, yogurt or sour cream, brown sugar, vanilla, honey or maple and the eggs. Whisk until it is all mixed well.
Whisk all the dry ingredients in another bowl until mixed well. Add to the banana mixture. Mix all of the ingredients until you no longer see dry flour. Do not over mix. Fold in walnuts, pecans or chocolate chips if using.
Transfer the dough into the bread pan. Level I off and let the dough rest, at room temperature, for 15 minutes. We need to let the whole wheat flour hydrate before we bake it.
Place in the oven and bake for 80 to 90 minutes — until an inserted toothpick comes out clean.
Remove the loaf from the oven and allow it to cool on a cooling rack for about 15 minutes. Flip the pan over to un-mold and finish cooling completely on the rack.
This loaf will last you up to 7 days in a closed container, in the fridge. You can also freeze it for a couple of months. Enjoy!
