Making Banana Bread with a little Twist!
Not flying lately, so thought I'll make videos of other things I enjoy. Cooking and baking is one of them.
A simple recipe for Banana Bread, if I can bake it anyone can! Baking soda and Baking powder helps.
The twist part comes from the nuts, palm sugar and coconut milk (if you don't have any of these, don't sweat it, just skip them and continue with other ingredients. Instead of Palm Sugar, you can add equal amount sugar.
Weighing all the ingredients is better.
Ingredients:
i) 50 Grams Sugar (I used white sugar)
ii) 80 Grams of Butter (Melted and cooled)
iii) 2 ripe bananas
iv) 4 tbsp of coconut milk, 2 tbsp of whole milk mixed with one spoon of palm or brown sugar. Add just the milk if you don't like coconut or don't have it.
v) Additional 20 grams sugar, I used Palm sugar to give it less sweetness! Feel free to use regular or brown sugar instead though.
vi) One teaspoon of vanilla essence ( I just pour it and judge it accordingly)
vii) 2 whole eggs (I used organic eggs)
viii) 80 grams of regular bread flour (whole wheat flour won't work)
ix) 2 grams of baking soda and 4 grams of baking powder
x) Walnuts (I used the left over walnut crumbs from the walnut bags we get, you can just crush 4-5 walnuts)
xi) Almonds (they give a good crunch)
You can use a hand mixer or use spatula to mix it. Takes a while with the spatula, make sure you mix it well and the bananas bread down into very small pieces.
Preheat the oven to 180 Celsius or 350 Fahrenheit and pop it in for 35 minutes. Simple enough to make and enjoy with tea or coffee!
If I can do it, you sure can too!
