How To make Peach Coffee Cake

DOTTIE - TMPJ72B------------------------------ 1/2 c Uncooked oats
2 tb Flour
1/2 c Brown sugar; firmly packed
1/2 ts Cinnamon
3 tb Butter or margarine; cut up
1/2 c Pecans; chopped
1 3/4 c All-purpose flour
1 1/2 ts Baking powder
1/2 ts Baking soda
1/4 ts Salt
6 tb Butter or margarine; soften
2/3 c Sugar
2 lg Eggs
1 ts Vanilla extract
1/2 pt Sour cream
1 1/4 lb Peaches; peeled, cut in
- 1" chunks (2 cups) Powdered sugar Preheat oven to 350~. Grease 9" square baking pan. Make streusel: Combine oats, flour, brown sugar and cinnamon in medium bowl. With pasty blender or 2 knives, cut in butter until mixture resembles coarse crumbs. Stir in
pecans. Combine flour, baking powder, baking soda and salt in medium bowl. Beat butter and sugar in mixer bowl at medium speed until light and fluffy. Beat in eggs one at a time, then add vanilla. Add sour cream alternately with dry ingredients, beginning and ending with dry ingredients; beat just until combined. Spread batter in prepared pan. Sprinkle evenly with half the streusel. Spoon peaches on top; sprinkle with remaining streusel. Bake 50-60 minutes, until toothpick inserted in center comes out clean. Cool in
pan on wire rack 30 minutes. Sprinkle with confectioners' sugar. Serve warm or at room temperature. Makes 8 servings. -----

We might be rushing summer a little bit, but peach season is almost here so let's get ready with two delicious recipes!
Paleo Coffee Cake - with PEACHES???? | So GOOD!
If you love coffee cake, you'll LOVE this gluten-free and paleo coffee cake with peaches at the bottom! Seriously, peaches take this breakfast (or dessert) to a whole 'nother level that's simply amazing, especially when peaches are in season!
????PEACH COFFEE CAKE RECIPE:
Serves 8
???? For the cake:
1 cup Cassava Flour
1 cup Almond Flour
1/2 cup Coconut Sugar
1 tsp Baking Powder
1/4 tsp Baking Soda
1/2 tsp Sea Salt
1 Egg
1 cup Almond Milk
1 tsp Apple Cider Vinegar
1/4 cup Avocado Oil (or melted Coconut Oil)
2 tsp Vanilla Extract
2-3 ripe Peaches, diced
Optional: 1 tsp dried Ginger
???? For the Topping:
1/4 cup Coconut Sugar
1/4 cup Cassava Flour
pinch Sea Salt
1/2 tsp Cinnamon
2 tbs Avocado Oil (or melted Coconut Oil)
➡️ Instructions:
Preheat the oven to 375 F.
Mix the flours, sugar, baking powder, baking soda, salt, and dried ginger (if using) in a large bowl.
Whisk together the egg, milk, vinegar, avocado oil, and vanilla in a medium bowl.
Add the wet ingredients to the dry and mix until just combined.
Scatter the peaches in the bottom of an 8-inch square pan. Spread the batter evenly over the peaches.
Mix the ingredients for the topping together in a small bowl and then sprinkle over the batter.
Bake for 45 minutes, until the fruit is bubbling and the top is a golden brown. Let cool for at least 15 minutes before serving.
This is also great with cherries, like in this recipe!
