Italian Grandma Makes Spaghetti Aglio e Olio (Garlic & Oil)
SPAGHETTI AGLIO e OLIO (Garlic & Oil):
1 lb Spaghetti
¾ cup Extra Virgin Olive Oil
10-12 cloves Garlic, sliced
½ cup Fresh Parsley, chopped
1 tsp Crushed Red Pepper Flakes, or to taste
1 tsp Black Pepper, or to taste
3/4 cup Pasta Water, approximately
½ cup Grated Pecorino Romano, or to taste
Salt to taste

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?

Healthy Vegetable Pasta With Olive Oil Garlic & Mushroom

Servings - 2 - 3
INGREDIENTS
Water - 1 litre
Salt - 1 teaspoon
Ryca pasta - 250 grams
Ryca olive oil - 40 milliliters
Garlic - 30 grams
Bell pepper - 60 grams
Mushrooms - 350 grams
Olives - 1 tablespoon
Salt - 1 1/2 teaspoons
Black pepper - 1/4 teaspoon
Chilli flakes - 1 teaspoon
Oregano - 1 teaspoon
Thyme - 1/2 teaspoon
Basil - 1/2 teaspoon
Parmesan cheese - 35 grams
Parsley - 1 tablespoon
PREPARATION
1. Take a heavy skillet, add 1 litre water, 1 teaspoon salt and mix it well.
2. Add 250 grams ryca pasta and mix it again.
3. Bring it to a boil.
4. Boil for 8 - 10 minutes on medium heat.
5. Remove it from heat and drain the pasta. Keep aside.
6. Heat 40 milliliters ryca olive oil in a another heavy skillet, add 30 grams garlic and stir well.
7. Add 60 grams bell pepper and mix it well.
8. Cook for 3 - 5 minutes on medium heat.
9. Then, add 350 grams mushrooms and mix it again.
10. Cook for 8 - 10 minutes on medium heat.
11. Add 1 tablespoon olives and mix it well.
12. Add 1 1/2 teaspoons salt, 1/4 teaspoon black pepper, 1 teaspoon chilli flakes, 1 teaspoon oregano, 1/2 teaspoon thyme, 1/2 teaspoon basil and mix it well.
13. Now, add the boiled pasta, 35 grams parmesan cheese and mix it again.
14. Cook for 5 - 7 minutes on medium heat.
15. Add 1 tablespoon parsley and mix it well.
16. Cook for another 3 - 5 minutes on medium heat.
17. Remove it from heat.
18. Serve hot.
