Linguine with Shrimp & Lemon ????????
If you know me, then you know I’m obsessed with lemon! So when I found this recipe, I instantly fell in love ???? This dish features staple ingredients that I always have in my fridge and freezer, which makes it the perfect last minute put together dinner! It also is a super quick meal to throw together for nights you’re pressed for time.
What you’ll need -
For the lemon oil:
???? extra-virgin olive oil
???? lemon, zested
For the pasta:
???? linguine pasta (I used spaghetti in this video)
???? olive oil
???? shallots, diced
???? garlic cloves, minced
???? frozen shrimp
???? arugula
???? flat-leaf parsley
???? lemon juice (about 2 lemons)
???? lemon, zested
???? salt & pepper
Directions:
▫️add extra-virgin olive oil & lemon zest in a bowl
▫️boil pot with salted water
▫️when boiling, add linguine pasta & cook for 9 minutes
▫️dice shallots & garlic
▫️sauté shallots & garlic in frying pan with olive oil
▫️add some salt to sweat the onions & garlic out
▫️add shrimp to pan, season with salt & pepper
▫️let shrimp cook, for about 5 minutes
▫️add cooked linguine to pan with shrimp
▫️add lemon juice, lemon zest, and salt & pepper
▫️turn off heat
▫️add arugula & extra-virgin olive/lemon oil
▫️add pasta water (preferred consistency)
▫️add chopped parsley
▫️mix everything together
▫️eat & enjoy

INGREDIENTS:
●3 ounces whole wheat linguine (I use Smart Pasta, white pasta with lots of fibre!)
●2 teaspoons chicken bouillon (OXO)
●olive oil (for spritzer)
●1 cup mushroom , sliced
●2 tablespoons shallots , finely chopped
●2 tablespoons fat free cream cheese
●3 1/2 ounces sea scallops (about 1 cup)
●salt and pepper
●2 tablespoons fresh parsley , chopped
