Olive Garden Pasta e Fagioli Soup Copycat Recipe - This Pasta e Fagioli Soup is one of my favorite soups! It’s on heavy rotation at my house because we all love it so much! Especially on cold days.

Recipe:
Ingredients:
1 cup Ditalini Pasta
1/2 large onion or 1/2 tsp onion powder
1 lb ground sausage (Italian sausage if you like it)
1 pinch red pepper flakes
1 tsp Italian seasoning
1/2 tsp pepper
2-3 tsp minced garlic
2 celery stalks diced small
1 large carrot diced small
1 15 oz can diced tomatoes
1 15 oz can tomato sauce
3 cans of beans drained and rinsed (I used pinto, light, and dark kidney)
2 bay leaves
1 tsp dried rosemary
1 TBSP basil
4 cups chicken broth
Parsley
Parmesan Cheese
Pressure Cooker Instructions:
1. Boil water on the stove to cook the pasta.
2. With the pressure cooker on saute brown the sausage with the onion and red pepper
3. Once browned add in the Italian seasoning, pepper, garlic, celery, and carrot. Cook for 2-3 minutes.
4. Add in remaining ingredients except for parsley, parmesan, and noodles.
5. Pressure Cook on high pressure for 7 minutes and then natural release for 15 minutes.
6. Stir in Pasta.
7. Serve topped with parmesan and parsley
Stovetop Instructions:
1. In a medium-size pot boil water to cook the pasta.
2. In a large dutch oven or pot brown the sausage with the onion and red pepper.
3. Once browned add in the Italian seasoning, pepper, garlic, celery, and carrot. Cook for 2-3 minutes.
4. Add in remaining ingredients except for parsley, parmesan, and noodles.
5. Bring to a boil. Then reduce heat to medium-low and simmer for about 30 minutes till carrots are tender.
6. Stir in Pasta.
7. Serve topped with parmesan and parsley.

Ingredients
2 Tbsp olive oil, divided
1 lb lean ground beef
1 1/2 cups chopped yellow onion
1 cup diced carrots
1 cup diced celery (did not use)
3 cloves garlic, minced (1 Tbsp)
3 (8 oz) cans tomato sauce
2 14.5 oz cans low-sodium chicken broth
1/2 cup water, then more as desired
1 (15 oz) can diced tomatoes
2 tsp granulated sugar
1 1/2 tsp dried basil
1 tsp dried oregano
3/4 tsp dried thyme
1/2 tsp dried marjoram
Salt and freshly ground black pepper
1 cup dry ditalini pasta
1 (15 oz) can dark red kidney beans, drained and rinsed
1 (15 oz) can great northern beans, drained and rinsed
Finely shredded Romano or Parmesan cheese , for serving
3 Tbsp minced fresh parsley
***My additions...
1 tablespoon Onion Powder
1 tablespoon Garlic Powder
Instructions
Heat 1 Tbsp olive oil in a large pot over medium high heat, crumble in ground beef and cook, stirring occasionally until cooked through.
Drain fat from beef then transfer beef to a plate, set aside. Heat remaining 1 Tbsp olive oil in same pot.
Add onions, carrots, and celery and saute over medium-high heat until tender about 6 minutes, add garlic and saute 1 minute longer.
Add chicken broth, tomato sauce, water, canned tomatoes, sugar, basil, oregano, thyme, marjoram and cooked beef then season with salt and pepper to taste. (+onion powder and garlic powder)
Bring to a boil then reduce heat to medium-low, cover with lid and allow to simmer, stirring occasionally, until veggies are soft, about 15 - 20 minutes.
Meanwhile prepare ditalani pasta according to directions on package, cooking to al dente.
Add cooked and drained pasta to soup* along with kidney beans and great northern beans. Thin with a little more broth or water if desired.
Allow to cook 1 minute longer. Stir in parsley, serve warm with grated Romano or Parmesan cheese.

Pasta e Fagioli
INGREDIENTS
• 1 lb lean ground beef
• 1 yellow onion, finely chopped
• 2 medium carrots, diced
• 3 ribs celery, diced
• 3 cloves garlic, minced
• 3 (8 oz) cans tomato sauce
• 2 (14.5 oz) cans beef broth
• 1 (14.5 oz) can petite diced tomatoes
• 2 teaspoons granulated sugar
• 1 teaspoon dried basil
• 1 teaspoon dried oregano
• 8 oz dry ditalini pasta
• 1 (15 oz) can dark red kidney beans, drained and rinsed
• 1 (15 oz) can cannellini beans, drained and rinsed
• Parmesan cheese, freshly grated, for serving
• Kosher salt and freshly ground black pepper, to taste
PREPARATION
1. Brown ground beef in a large pot over medium-high heat.
2. When beef is almost cooked through, add onions, carrots, and celery and cook until tender, stirring occasionally, about 6 minutes. Add garlic and cook 1 minute more.
3. Add tomato sauce, beef broth, 1/2 cup water, canned tomatoes, sugar, oregano, and thyme. Bring to a boil, cover, and reduce heat to medium-low.
4. Let simmer 5 minutes, stir in ditalini pasta, and continue cooking until vegetables are soft and pasta is al dente, about 10 minutes more.
5. Add beans, season to taste with salt and pepper, and thin with more water, if desired.
6. Serve with Parmesan cheese and enjoy!

????Olive Garden Copycat Pasta Fagioli Soup
This is a simple one pot dish and it comes out SO freakin good and is INSANELY easy to make.
Here is how I made it:
1. First start off by browning your lean ground meat. I used 1 1/2 pounds of 96%
* carrots ????
* 1 tablespoon of oregano ????
* 1 tablespoon of basil ????
* 1 tablespoon of Italian seasoning ????
* 1 tablespoon of tomato paste ????
* 2 15oz cans of petite tomatoes ????????
* 1 small can of tomato???? sauce
* 2 cups of chicken broth
* 1 tablespoon of white sugar and mix everything together. Let it come to a simmer and add
* 1 15oz can of cannellini beans ????
* 1 15oz can of kidney beans ????
* 1 bay leaf ???? mix well.
* Cover and allow to simmer on low heat for the next 30 minutes.
3. Cook 1/2 pound of Ditalini pasta separately with plenty of salt for 7 minutes. Remove and rinse with cold water to stop the cooking process.
4. Once your soup has been cooking on low heat for 30 minutes add in your pasta (I added 2 cups of cooked pasta) add more or less if you like. That’s to your liking.
5. This is the time to add more chicken broth and salt if needed.
6. Top with parsley ????, Parmesan cheese and dry chili flakes. Dobn’t forget your toasted butter bread and Enjoy
