Pasta Broccoli 1 onion 3 garlic gloves Small piece of ginger 1/4 cup olive oil 1 carrot 1 eggplant 1 zucchini 1 bell pepper 1 cup of mushroom 1 Tbsp paprika 1 Tbsp oregano 1 Tbsp basil Salt Black pepper 300 ml tomato sauce 1 cup of water

Bursting with flavours, oregano pesto is an awesome way to elevate any dish. I used a mortar and pestle to make the pesto but feel free to use a blender. Super easy to make, you literally need a handful of ingredients to finish this pasta. Give it a try this summer, you will love it!!
Ingredients:
- 2 cups rotini pasta
Pesto - 1/2 cup fresh oregano - 1 clove garlic - salt - 1 tbsp olive oil - 1 tbsp crushed almond - 1/4 cup olive oil
Sauce - 3 tbsp olive oil - 1 sprig oregano - 250g cherry tomatoes - 1 clove garlic - salt & pepper - 1 tsp chili flakes - 2 ladles pasta water
Steps:
1. Cut the cherry tomatoes into halves. 2. Grind all ingredients for pesto on mortar & pestle. 3. Boil pasta. Save pasta water. 4. Add oil to pan on medium heat. Add sprig of oregano to infuse the oil. Add tomatoes, garlic, salt & pepper. Stir until tomatoes are mushy. Add chili flakes and pasta water. Mix in the boiled pasta. 5. Serve with parmesan cheese and drizzle oregano pesto.
