How To make Old Fashioned Chocolate Fudge
1 1/2 c Milk
4 oz Unsweetened chocolate (sqs)
4 c Sugar
3 tb Light corn syrup
1/4 ts Salt
3 tb Butter or margarine
1 1/2 ts Vanilla
1. Combine milk and chocolate in medium-size heavy saucepan; cook over low
heat until chocolate is melted. Add sugar, corn syrup and salt and cook, stirring constantly, to boiling. 2. Cook, without stirring to 234F on a candy thermometer. (A teaspoonful
of syrup will form a soft ball when dropped into cold water.) Remove from heat at once. Add vanilla and butter or margarine, but do not stir in. 3. Cool mixture in pan to 110F, or until lukewarm; beat with wooden spoon
until mixture thickens and begins to lose its gloss. (This will take about 15 minutes.)
4. Spread in a buttered 8x8x2" pan. Let stand until set and cool; cut into
squares. Makes about 2 pounds.

HOW TO MAKE OLD-FASHIONED CHOCOLATE FUDGE
A delicious chocolate fudge recipe. This fudge is very sweet, bursting with flavors of chocolate- not to mention, it melts in your mouth. Here's a perfect gift for Valentine's Day or Christmas- or any occasion really. And the best part? It's authentic. I got it from a 60's cookbook- so none of that added marshmellow gunk. This is pure fudge from the old times.

When I say old-fashioned, I mean old.. this recipe is actually over 100 years old!!! It just can't get any better than this, this fudge makes the absolute perfect holiday gift.
Ingredients:
1/2 lb. marshmallows (about 32)
3 12oz bags semi-sweet chocolate chips
2 Tbs. vanilla extract
2 sticks butter
41/2 cups sugar
2 cups walnuts
1 12oz can Evaporated milk
Directions:
Place your marshmallows in a bowl and place to the side. In a large mixing bowl add the chocolate chips, butter and vanilla and place to the side aswell. In a large pot add the sugar and can of evaporated milk and bring up to a boil while stirring constantly over medium heat. Once it starts boiling, allow in to boil for exactly 6 minutes. Lower the heat after the 6 minutes and add the marshmallows. Stir until melted then pour all of the hot mixture into the bowl with the chocolate chips. Attach your standing mixer and allow it to whip until fully combined and shiny. Add the walnuts and mix until combined then quickly pour the fudge into a 13x9 inch pan or 2 8 inch aluminum pans. allow it to fully cool then cover and refrigerate to fully set. Old Fashion Fudge
This is a recipe from the 1950's Hershey's Cocoa Box with a few alteration on my part.
I've given the orginal recipe and my own version with substitutions. I sure hope you'll try this fudge recipe even though it takes a long time to make. Just remember to follow the technique exactly and DO NOT STIR UNTIL AFTER THE COOLING IS COMPLETE.
