Healthy Banana Pancakes that are only a few ingredients, dairy-free and gluten-free too. They are so easy to make and absolutely delicious. I am sure you have been seeing me enjoy them on my stories so I wanted to make a recipe video for you all. I nailed this version out of the few I tried and personally liked it the most. This recipe makes 7 mini pancakes or one portion so feel free to double or triple it. You will need:
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 ripe banana
1 large egg
pinch of salt
dash of pure vanilla bean paste or vanilla extract
1/3 cup oat flour — see notes below
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
Please note: If you don’t have oat flour you can simply add some rolled oats to a blender and blend until you get a flower like consistency. I did use rolled oats the other day and I personally like this texture way more as it’s definitely more fluffy and less mushy.

In a bowl mix the first four ingredients and make sure your banana is nice and mashed. Add the oat flour and incorporate until you have a thick batter. In a pan on medium heat add some cooking spray and let it heat up a bit. I made mini pancakes because the smaller they are the better they will cook. Cook them on each side for 2-3 minutes or until golden. Enjoy with any toppings you love and follow for more.

These banana pancakes are light, fluffy, and loaded with plenty of banana flavor. The perfect breakfast recipe for using up very ripe bananas.

BANANA PANCAKES INGREDIENTS:
►1 1/4 cups buttermilk
►1 1/2 cups all-purpose flour, measured correctly
►1 Tbsp granulated sugar
►1 tsp baking soda
►1/4 tsp salt
►3 Tbsp unsalted butter, melted
►2 large eggs
►1 tsp vanilla extract
►2 medium bananas, mashed (1 cup), plus more sliced banana to serve
►1 Tbsp butter, divided, to sautee
►1 Tbsp olive oil, divided, to sautee

Ingredients:
1 cup old fashioned rolled oats
1/4 cup all purpose flour
1 tbsp sucanat, raw sugar, or granulated sugar
1 tsp baking powder
1/4 tsp salt
1 cup of buttermilk (make homemade using skim milk or almond milk with 1 tsp of lemon juice or apple cider vinegar)
1 large egg
1/2 tsp vanilla extract
neutral flavored oil like canola or grape seed for cooking

Homemade Oatmeal Pancakes, or Oatcakes are a great breakfast recipe you can make yourself! This easy dish can be served with strawberries, bananas, or with syrup and butter!
Recipe:
Ingredients
2 cups oat flour
1 TBSP sugar
1 TBSP baking powder
1/4 tsp salt
1 1/4 cup milk
2 TBSP oil (I use coconut oil)
2 eggs
1/2 tsp vanilla (optional)
Instructions
If making your own oat flour, add your oats to the blender and blend until you have a fine powder.
In a larger bowl, add all of your dry ingredients and whisk until well incorportated.
In a separate mixing bowl or large measuring cup, add all of your wet ingredients and whisk unil combined.
Pour your wet ingredients in with your dry and mix well. Allow to sit for 10 minutes to thicken a bit as you heat your skillet.
Drop 1/4-1/3 cup scoops per cake and cook for about 2 minutes per side.
Serve with butter and maple syrup and enjoy!
