How To make Mung Dal with Black Mustard Seeds
1 c Yellow split mung beans
1/4 ts Turmeric
1/2 ts Grated fresh ginger
1 ts Salt
2 ts Lemon juice
3 tb Ghee
1/2 ts Black mustard seeds
1 ea Green chilies, seeded &
shredded OR :
1/4 ts black pepper 2 tb Chopped coriander leaves
Wash mung beans. Place with turmeric & ginger in a large pot. Add 4 cups water & bring to a boil, stirring often. Reduce heat to medium & simmer, partially covered, for 30 minutes. Turn off heat & beat with a wire whisk. When ready to serve, heat puree till piping hot. Stir in the lemon juice & salt. Heat ghee over a high heat in small frying pan. When very hot, carefully add the mustard seeds & fry till they start to turn grey. When they stop sputtering, add the chili. Stir rapidly for a monent & then turn off the heat. Note: You can also make this curry without soaking the beans. If you don’t want to soak the
moong beans then you need to add more water (add extra 1/2 cup water, total 2 cups water) and
cook them for 7-8 whistles over medium flame or until the beans are soft to touch.

1/2 cup Moong Beans (sabut mung dal/green gram), soaked in water for 4 hours or overnight
1 tablespoon Oil
1/4 teaspoon Mustard Seeds, optional
1 teaspoon Cumin Seeds
1 medium Onion, finely chopped (approx. ½ cup)
1/2 teaspoon grated Ginger
1 Green Chilli, chopped
4-5 Curry Leaves, optional
1 medium Tomato, finely chopped (approx. 1/3 cup)
1/2 teaspoon Red Chilli Powder
1 teaspoon Cumin-Coriander Powder
1/2 teaspoon Turmeric Powder
1½ cups Water
Salt, to taste
2 tablespoons Coriander Leaves, for garnishing

Split Green Lentils Moong Dal (Chilka Mung Dal)
Ingredients:
Split green moong dal (chilka moong dal) - 1 1/2 Cups
Water - 4 Cups
Salt - 2 Teaspoons
Turmeric powder - 1 Teaspoon
For Tadka
Tomoatoes - 2 Qty.
Clarified Butter (Ghee) - 2 Tablespoons
Cumin seeds - 1 1/4 Teaspoons
Mustard seeds - 1/2 Teaspoon
Bay leaves - 2-3 Qty.
Whole red chillies - 4-5 Qty
Black cardamom - 3-4 Qty.
Cloves - 3-4 Qty
Cinnamon sticks - 1 Qty
Asafoetida - 1 Teaspoon
Ginger paste - 1 Teaspoon
Coriander powder - 1 1/4 Teaspoons
Red chilli powder - 1 1/2 Teaspoons
Salt - 1/2 Teaspoon (to taste)
