Shout out to my MIL who gave me the idea for it, it’s based off a meal she told me about she used to make all the time! It’s definitely very creamy, flavorful, and filling! All the things a casserole dish should be required to be.
Some preliminary research is showing that some people who experience GI upset after consuming milk may be sensitive to the A1 protein and are able to digest the A2 protein with no discomfort. What I’m very interested to see is more research about how the A1 protein breaks down into a component know as BCM-7 which has been linked to inflammation and damage of the GI tract. Unfortunately, right now there isn’t enough research to back any sort of claims of A2 being the better choice up. What I can tell you is that if you currently avoid drinking milk because of GI discomfort, you might want to give it a shot and see how you do with it. There is no taste, color, or nutrition difference (same protein, fat, and carb contents) in the milk.

Ingredients
1½ lbs. chicken thighs, boneless, skinless, cut into bite size pieces
1 Tbsp. canola oil
3 medium carrots, sliced diagonally into ½-inch pieces
1 medium sweet onion, cut into 12 wedges
6 garlic cloves, chopped
5 cups chicken stock, divided
2 Tbsp. all-purpose flour
1 dried bay leaf
12 oz. baby white potatoes, quartered
¼ cup fresh chopped parsley
salt and freshly ground black pepper
( i always add in extra seasonings... I added about 1/2 to 1 tablespoon of oregano...around a teaspoon of paprika...and around 1/2 tablespoon of garlic and herb seasoning)
Season the chicken with salt and pepper, to taste.
Heat oil over high heat. Add chicken and cook, stirring occasionally, until brown on all sides, about 6 minutes total. Transfer to a plate.
Add carrots and onion to the pot and cook, stirring often, until onions begin to soften, about 4-5 minutes. Add garlic and cook for about 30 seconds, stirring nonstop. Add ½ cup chicken stock while stirring and scraping to loosen browned bits from the bottom of the dutch oven.
In a small bowl, whisk together flour and ½ cup broth; add to the dutch oven. Stir in chicken and remaining 4 cups of chicken broth. Add bay leaf and season with salt and pepper, to taste. Bring to a boil, reduce heat to medium-low and simmer 25 minutes, partially covered.
Add potatoes and cook uncovered until potatoes are tender, about 18-20 minutes. The liquid will slightly reduce even further. Stir in parsley and discard bay leaf before serving.

INGREDIENTS
3 teaspoons olive oil, extra virgin
1 cup chopped sweet yellow onion
1 chopped bell pepper, any color (I used a red bell pepper)
10.5 ounces cream of chicken soup, undiluted
10.5 ounces cream of mushroom soup, undiluted
10 ounces mild Rotel, undrained
3 cups boneless skinless chicken breast, shredded and cooked
2 tablespoons chopped cilantro, optional
12 soft taco-size corn tortillas, quartered
4 cups freshly shredded Colby and Monterey jack cheese, divided into 1½ and 2½
INSTRUCTIONS
Preheat the oven to 375°F.
Add the olive oil, chopped onion, and chopped bell pepper to a 4 to 5-quart
Dutch oven over medium-high heat. Saute for 5 to 7 minutes or until the onions and bell peppers are softened. Remove from the heat.
Whisk in the undiluted cream of chicken soup, cream of mushroom soup, and the undrained Rotel. Whisk until well combined.
Stir in the shredded chicken and chopped cilantro.
Lightly spray a 9×13 baking dish with nonstick cooking spray. Line the bottom of the prepared baking dish with half of the quartered corn tortillas.
Spoon half of the chicken mixture over the bottom layer of corn tortillas.
Sprinkle 1½ cups of the shredded cheese over the chicken layer.
Layer the remaining corn tortillas over the cheese layer.
Spread the remaining chicken mixture over the corn tortillas.
Sprinkle the remaining shredded cheese over the chicken mixture.
Bake uncovered for 30 minutes. Serve while hot.
