JHC Week 4 - Tuesday - Mexican Rice, Pork, Chops, and Black Beans
Mexican Rice
Ingredients
1. 1 (28-ounce) can tomatoes
2. 1 medium onion -peeled and coarsely chopped
3. 2 cups chicken broth
4. 1 1/2 teaspoons kosher salt
5. 1/2 teaspoon ground cumin
6. 1/3 cup oil
7. 2 cups long-grain white rice
8. 1 to 2 jalapeño or Serrano chili peppers, seeded and minced
9. 4 to 5 cloves garlic, finely chopped
10. 1/4 cup finely chopped fresh cilantro
11. Juice of 2 medium limes, plus more wedges for serving
Method
1. Place the tomatoes and their juices and onion in a blender or food processor and purée until smooth. Transfer 2 cups of the tomato mixture to a medium saucepan. Stir in the chicken broth, salt, and cumin and bring to a boil over medium heat.
2. Heat the oil in a Dutch oven over medium heat until shimmering. Add the rice and sauté, stirring frequently, until lightly toasted and golden, about 5 minutes.
3. Add the jalapeños and cook until softened, about 2 minutes, lowering the heat as needed. Add the garlic and cook for 30 seconds more.
4. Pour the boiling tomato mixture over the rice and stir to combine. Reduce the heat to low. Cover and cook until the liquid is absorbed and the rice is tender, about 15 minutes. Remove from the heat and gently fluff the rice with the fork. Cover again and set aside to steam for 10 minutes.
5. Add the cilantro and lime juice and fluff again to combine. Taste and season with more salt as needed. Serve with lime wedges.

Mexican Pork Chops
Ingredients
1. 4 Pork Chops
2. 2 tablespoons brown sugar
3. 2 teaspoons kosher salt
4. 2 teaspoons chili powder
5. 1 1/2 teaspoon cumin
6. 1 teaspoon smoked paprika
7. 1 teaspoon dried oregano
8. 1 teaspoon granulated garlic or garlic powder
9. 1/2 teaspoon onion powder
10. 1/2 teaspoon freshly cracked black pepper
11. 1/4 teaspoon cayenne pepper
12. 3 tablespoons olive oil
Method
1. Preheat the oven to 425 degrees.
2. Combine all the spices in a small bowl.
3. Add the olive oil and stir well to combine. It will be a thick, paste-like consistency. Allow this mixture to rest for 15 minutes.
4. Line a small baking sheet with foil and place a wire rack over it.
5. Rub the spice mixture all over the roast, completely covering all sides with spices.
6. Roast for 12 minutes in the preheated oven. The meat reaches an internal temperature of 145 degrees.
7. Let sit 15minutes before slicing.

Mexican Black bean
Ingredients
1. 1 teaspoon olive oil
2. 1/2 cup chopped onions
3. 1 Jalapeño – deseeded and chopped fine
4. 3 cloves garlic, minced
5. 1 (16 oz) can black beans, do not drain
6. 1/4 cup chopped cilantro
7. 1 teaspoon cumin
8. 1/2 teaspoon salt
Method
1. In a small saucepan, heat the olive oil over medium heat. Add the onions, Jalapeño, and garlic and cook for 3-4 minutes, just until the onions begin to soften.
2. Add the undrained black beans, cilantro, cumin, and salt. Stir well and reduce heat to medium low. Allow to cook for 15-20 minutes, stirring occasionally. Taste and adjust seasonings to your liking.
3. Serve sprinkled with more chopped cilantro and cotija cheese if desired.

3 oz. Calvados
1 cup chicken stock
For Yukon Gold Mashed Potatoes:
1 ¾ lb. Yukon Gold potatoes peeled and cut into 1-inch cubes
1 cup cream
3 tbsp. unsalted butter, softened
1/2 tsp. kosher salt
1/2 tsp. Ground black pepper
For Caramelized Apples:
4 Granny Smith apples
4 oz. butter
1 oz. apple brandy
4 oz. brown sugar
1 clove
1 cinnamon stick
1-star anise
For Braised Cabbage:
½ head red cabbage
½ red onion
2 oz. apple cider vinegar
4 oz. red wine
1 tsp. mustard seeds
1 tsp. caraway seeds
1 tbsp. avocado oil
Directions:
00:00 Before cooking pork, let it reach room temperature to prevent dryness, and season twice for better flavor.
00:27 Preheat a pan with olive oil, sear pork on both sides and render the fat by standing the pork chop up in the pan.
00:55 Add butter to the pork after searing for a nut-brown flavor and to prevent drying.
01:24 To make a sauce, drain the pork fat, then sauté garlic and shallots, and deglaze with Calvados and chicken stock.

One Pan Creamy Garlic Butter Pork Chops in 30 Minutes
One pan creamy butter pork chops are super delicious and easy to make. They make a great midweek meal as you can make them in 30 minutes.
Ingredients
2 butterfly pork chops sliced in half pounded and tenderized
1 egg
2 tbsp of corn starch
salt and pepper to taste
1 or 2 tbsp of butter
3 cloves of chopped garlic
1/2 tsp of turmeric
1/2 tsp curry powder
½ tsp of chili flakes
1½ cups of heavy cream
cilantro or parsley for garnish
Instructions:
Add the chops, egg, corn starch, salt, and pepper to a bowl. Mix until well combined.
Put a generous amount of oil to a preheated pan and fry until the meat is a golden brown.
Remove the chops and set them aside.
In the same pan, add the butter in and allow it to melt down.
Place the garlic, turmeric/curry, and chili flakes in. Saute for a couple of minutes until the spices activate.
Pour the cream in and bring it to a boil.
Put the pork back in, allow it to simmer for about five minutes while spooning the sauce over the meat. Garnish with cilantro / parsley and serve.

Ingredients and recipe:
685g Boneless pork chops
Cut the pork into cubes
Salt
Black pepper
Garlic powder
Paprika
Mix well
Set aside for 20 minutes
Medium heat
Olive oil
Place the meat into the pan
Fry for about 5 minutes
Flip over and fry for another 5 minutes
Remove from the pan
1tbsp unsalted butter
3 cloves of garlic
1tbsp soy sauce
1/4 cup honey
2tbsp cooking wine
Add the meat back to the pan
Stir fry for about 2 minutes
Remove from the pan
Parsley
Super tasty and delicious!
