Grilled pork chops are so darn good and so easy to make!
For today’s pork chops I used thick-cut pork chops, kosher salt, ground black pepper, pepper sauce, Frank’s hot sauce, white wine and freshly chopped garlic. I let the chops sit in the marinade for about 45 minutes. Longer is even better.
I cooked the chops at 450F. Grilling tip: don’t keep flipping your chops or steaks. Let them cook nicely on one side and then flip them to finish cooking the other side. One flip is enough. I was looking for an internal temperature of 160F. I topped the pork chops off with a generous squirt of fresh lemon juice and rested them under foil for a few minutes before serving dinner.

Dry, chewy pork chops are a thing of the past—these thick-cut beauties are everything an excellent grilled pork chop should be. By starting out with thick chops it's easier to prevent them from overcooking, while a dry brine keeps them seasoned and juicy. Here we utilize two-zone indirect heat, which allows you to gently finish cooking the chops after getting them browned over high heat.
