How To make Mean and Lean Beef Stroganoff
3/4 lb Beef round steak, cut 1/2"
Thick and trimmed of fat 1 tb Cooking oil
2 c Sliced fresh mushrooms
1/2 c Dry sherry
1/2 c Water
1/2 ts Instant beef bouillon
Granules 1 8 ounce carton plain low
Fat yogurt 1 tb All purpose flour
1 ts Sugar
1/2 ts Salt
Dash pepper 2 c Hot cooked rice
Snipped parsley (opt) Partially freeze the steak.Thinly slice across the grain into bite-size strips.In skillet,brown meat,half at a time, in hot oil for 2 to 4 minutes.Remove meat from skillet.Add sliced mushrooms to the skillet;cook for 2 to 3 minutes or until tender.Remove mushrooms.Add sherry,water and bouillon granules to the skillet;bring to boiling.Cook,uncovered,over high heat 3 minutes or until liquid is reduced to 1/3 cup. Combine yogurt,flour,sugar,salt and pepper;mix well.Stir the low fat yogurt mixture into the liquid in the skillet;stir in meat and mushrooms.Cook and stir over low heat until the mixture is thickened and heated through;DO NOT BOIL.Serve over hot cooked rice.Sprinkle the beef stroganoff mixture with snipped parsley,if desired.Makes 4 servings.

A simple yet delicious recipe for slow cooker Beef Stroganoff
Ingredients:
3 pound Meat (Beef Chuck, Sirloin or Round Steak)
3 cans Campbell's Golden Mushroom Soup (10.75 Ounce)
2 Onions
5-6 Garlic Cloves, diced
4 Tablespoons Worcestershire Sauce
1 Cup Water
16 Ounces Fresh Mushrooms
12 Ounces Cream Cheese
In a slow cooker, combine the meat, soup, onion, Worcestershire sauce and water. Stir in cream cheese after 4-5 hours and let dissolve. 40 minutes before serving add Mushrooms. Total Cook Time on Low setting for 8 hours, or on High setting for about 5 hours.

Recipe
Beef mixture:
3-4 lbs ribeye (use chuck for budget friendly)
16 ounces full fat sour cream
32 oz beef bone broth
2-4 eggs
1 Tbsp cooking fat of choice
Optional seasonings:
Smoked salt to taste
1 tsp onion powder
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp thyme
1/2 tsp parsley
1/2 tsp chives
1/8 tsp nutmeg
2-4 Tbsp coffee
1/2 tsp shrimp powder
Cut ribeye into 1/2 inch chunks. Preheat a heavy bottom pan like a Dutch oven on medium high heat. Add lard, bacon grease, beef tallow, or other oil of choice to hot pan on medium high heat. In batches to keep a thin layer, add beef and sprinkle with a large pinch of salt. Stir briefly and brown beef chunks for 1-2 minutes until a golden brown crust is achieved. Remove with slotted spoon and add next batch of beef chunks and repeat. Continue in batches until all beef is browned.
Add spices to pan with hot fat to toast for 10-20 seconds. Add coffee, beef broth, and shrimp powder and whisk while scraping to deglaze bottom of pan. Bring to a simmer, add sour cream, and whisk to combine. Turn to low - medium low heat and simmer to begin cooking liquid down. Reduce liquid by 1/2-2/3.
(Note: If using chuck roast, cut into similar sized pieces and brown beef as above. Then add to a pressure cooker with 1 cup of beef broth. Pressure cook for 45-60 minutes in high pressure and do a quick release. Carefully remove beef from pressure cooker and add liquid back into heavy pan with seasonings and the rest of the bone broth. Proceed with the recipe.)

Noodles:
8 eggs
3-4 oz shredded whole milk mozzarella
2 Tbsp egg white powdered
2 tsp beef gelatin (or any unflavored gelatin)
Add noodle mixture to blender and blend on high for 30 seconds.
Pour thin layers into well-greased silicone pans with edges (baking sheet with edges and parchment paper will also work but may be harder to achieve even noodles). Bake at 325F for approximately 15 minutes. Remove, cool, roll, and slice into desired size noodles.

After beef liquid and sour cream mix has reduced 1/2-2/3 and noodles are ready, add 2 raw eggs to a separate bowl. Whisk eggs until smooth and combines. Add 1 small ladle (less than the amount of liquid eggs) of hot beef liquid to raw eggs in bowl and whisk very well to temper eggs to prevent them from scrambling. Do this 2 more times. Gradually pour this mixture back into beef broth pan while whisking vigorously. Bring back to a simmer while whisking for a 2-3 minutes. Liquid should be thicker. If liquid is still very thin repeat this same process with two more eggs. Continue reducing broth until desired thickness is achieved. For smoother sauce use an immersion blender to combine.
Add ribeye chunks back to this sauce mixture and cook 3-5 minutes. (If using chuck roast, add beef with noodles.) Add noodles to mixture with beef and stir gently to coat for 1-2 minutes or just until simmering. Serve immediately.

Recipe eXtreme Stroganoff
1 lb lean round steak cubes
1 envelope dry beefy onion soup mix
10 ¾ oz can cream of celery soup
10 ¾ oz can cream of mushroom soup
Place all items in slow cooker. Cook on low for 6 to 8 hours, stirring occasionally. Serve over cooked noodles or rice. ( For variation, stir in ½ c sour cream)

We were hungry for a little something different this week and my new cookbook from my PGH Mom Deb came through! This week I made a recipe for Beef Stroganoff from Michael Matthews. It came out to just under 500 calories per serving and serves 4! Check it out!

Ingredients:
8oz Egg Noodles
1lb Beef Tenederloin
2tbs Extra Virgin Olive Oil
1/2 Medium Onion
4oz White Mushrooms Sliced
1tbs Cornstarch
10.5oz Condensed Beef Broth
1tbs Dijon Mustard
1 clove Garlic
3tbs White Wine
1/2tbs Worcestershire Sauce
2tbs Low-Fat Sour Cream
2tbs Reduced Fat Cream Cheese
Process:
1. Boil a large pot of water and cook the noodles according to bag instructions
2. While the noodles cook, season the meat with salt and pepper. Warm oil in skillet and cook beef until browned.
3. With the beef to one side of the skillet, add onions and mushrooms, cook for about 3-5 minutes. Move to the side with the beef and mix cornstarch with 2tbs of broth. Cover beef, onions, and mushrooms with the mixture
4. Pour remaining beef broth in the skillet and bring to a boil. Reduce the heat to low and stir in mustard, garlic, wine, and Worcestershire sauce. Over and let simer for 10 minutes.
5. Two minutes before beef is done, stir in sour cream and cream cheese. Stir well and allow beef to finish cooking. Let sit for 5 minutes and serve
