Cooking with a Toddler - Easy BEEF STROGANOFF Recipe with PIEROGIES
Sisi and I are making our version of the Beef Stroganoff and instead of noodles, we swapped them out for @mrstspierogies #ad. These mini pierogies are pasta pockets stuffed with creamy mashed potatoes and cheesy goodness so they’re super kid- friendly - plus the dumpling shapes are familiar and fun for them to eat, too! These are a winner because BOTH kids gobbled them up.
Recipe:
1 tablespoon butter
1/2 an onion, chopped
1 clove garlic, minced
1 cup mushrooms, sliced
1 lb ground beef
1/2 teaspoon oregano
1 1/2 tablespoon flour
2 teaspoons worcestershire sauce
2 teaspoons dijon mustard
1 1/2 cup chicken broth
1/2 cup sour cream or greek yogurt
In a pan on medium high heat, add butter and let it melt. Add onions and let it saute until translucent. Add garlic, mushrooms, and oregano in to cook for a few minutes.
Next, add the ground beef and break it up into large chunky bits. Cook it for 5 minutes until the meat is nice and golden brown. Add the flour in mix it with the meat.
Then add the worcestershire sauce, dijon mustard, chicken broth and mix well.
Add sour cream and let it simmer for 5 minutes until the sauce thickens up. Set aisde to work on the pierogies.
In a pan on medium heat, add olive oil and 2 tablespoons of water. Add pierogies and put a lid on the pan to let it steam. Once the water has soaked up, remove the lid and let the pierogies pan fry for 2-3 minutes until the bottoms are golden brown.
Add pierogies to a plate and put the beef stroganoff on top. Enjoy!

Creamy mushroom and beef stroganoff over warm egg noodles stands the test of time - Recipe below!
Ingredients:
1 butter packet
1/2 pound ground beef
1 small onion, finely chopped
4 cloves garlic, minced
Salt and pepper, to taste
12 ounces white mushrooms, sliced
2 tablespoons flour
2 teaspoons tomato paste
1/2 teaspoon smoked paprika
2 cups beef broth
1 teaspoon dijon mustard
8 ounces egg noodles
1/4 cup sour cream, plus 1/4 cup for garnish, divided
2 tablespoons chopped parsley
Steps:
1. Bring a pot of salted water to a boil.
2. Melt butter in a large skillet over medium-high heat. Sauté the ground beef, breaking it up while allowing it to slightly caramelize to get brown bits of color. And onion and garlic and sauté until beef is browned and cooked through. Season with salt and pepper.
3. Add the mushrooms to the beef mixture and sauté until they begin to brown, about 4 minutes or until any excess water is cooked out. Sprinkle the mixture with flour, add the tomato paste and smoked paprika, and stir for 1-2 more minutes until flour has been fully incorporated. Drop the stock to add the beef broth. Add dijon mustard to the mixture and stir to combine. Scrape any bits from the bottom of the pan. Reduce to simmer for 10 minutes.
4. Add egg noodles to salted boiling water and cook as indicated on packaging. Drain in a colander.
5. Remove skillet with beef mixture from the heat and fold in the sour cream. Fold in the noodles and stir to coat. Season with salt and pepper to taste. Garnish with parsley and a dollop of sour cream.
