How To make Gary's Beef Stroganoff
2 lb Beef, 1" cubes
1 1/2 lb Mushrooms
3 Onions
2 tb Dill, fresh
25 oz Red Wine, dry, full bodied
1 1/2 c Sour cream
1 tb Tomato paste
3 tb Olive oil
2 Garlic cloves, minced
1 Bay leaf
2 c Beef stock
Salt Pepper Flour for dredging
Peel and chop onions. If large mushrooms are being used, slice into rather large slices. I prefer to use small mushrooms and leave the whole. Dredge beef cubes in flour and give them a light coating. Heat a large stewing pot and add olive oil. Brown beef cubes thoroughly in olive oil. Add onions, garlic and mushrooms and saute lightly. Add red wine (all) and enough beef stock to barely cover the ingredients. Add bay leaf (broken) and dill. Salt and pepper to taste. Add tomato paste. Cover and simmer, stirring occasionally, for about 2 hours or until beef is very tender. The cooking liquid will thicken from the flour in which you dredged the beef. The desired result is that the ingredients are coated with a thick gravy. If more liquid is needed during the cooking process, add additional beef stock sparingly. Be careful that you scrape the bottom of the pot when stirring to prevent flour from sticking and burning. Just before ready to serve, mix in 1 1/2 cups sour cream. Place into a casserole dish or tureen and garnish with sprigs of fresh dill. Serve with rice or buttered noodles.

This beef stroganoff recipe is so easy and super delish!! When you add your sour cream at the end you can also throw in a can of cream of mushroom soup but I didn't because my kids don't like mushrooms... ????♀️

Beef Stroganoff
Originally a Russian dish, Stroganoff has been adopted by the world. Almost every country has a variation or two of the dish. I am using the American version here in this video. We substitute Greek Yogurt for sour cream all the time, check it out! Try with some green peas added as well for a little flair!

your going to love this beef stroganoff. easy to make and bloody moreish. serves 4 with mash or rice. recipe written below.
750g beef rump steak diced
1/3 cup plain flour toss and put in bowl
2 table sp oil
1 brown onion chopped
200g button mushrooms sliced
fry 2 mins then add
2 tea sp sweet paprika
2 cloves garlic crushed or 2 heaped tea sp jar garlic
2 table sp tomato paste
1 table sp dijon mustard
stir and fry 1 min then add
2 cups chicken stock
2 table sp wistireshire sauce
simmer with lid on 15 mins
then simmer with lid off for 15 mins stirring every couple
turn heat off and add
1/4 cup chopped parsley
2 table sp sour cream
mix well serve with little dollop cream and sprinkle extra parsley
freezes really well. thaw heat in saucepan on low add 2 table sp stock or water so it doesnt dry out while heating
