Cinnamon Rolls (Buns) Recipe
Prepare: a square pan 23cm (9 inch) lined with baking paper
PREHEAT the oven for at least 20 minutes at 170C before baking, set the oven rack in the lower third of the oven
The dough:
300g bread flour (or all purpose flour) - 2 1/3 cup
160g milk - 2/3 cup
1 egg (medium size, 55g)
30g sugar (2 tbsp)
1 tsp (4g) instant dry yeast
1/2 tsp salt
40g unsalted butter (room temp)
The filling:
80g brown sugar - 1/3 cup
1 tbsp ground cinnamon
a pinch of salt
Cream cheese frosting:
150g cream cheese (3/4 cup)
30g powdered sugar (3 tbsp)
2 - 3tbsp milk
1/2 tsp vanilla extract

Super Soft & Fluffy Cinnamon Rolls Recipe
The softest cinnamon rolls I ever made! Before they used to turn out so dry and crummy, but now I don't use any other recipe than this one!

DOUGH (CLICK ABOVE LINK FOR METRIC MEASUREMENTS)
2½ cups all purpose flour
¼ cup sugar
2¼ teaspoons instant yeast
½ teaspoon salt
½ cup whole milk
3 tablespoons butter
2 tablespoons vegetable oil
1 teaspoon vanilla
1 egg
¼ cup water
FILLING
¼ cup butter soft
⅓ cup brown sugar
1 tablespoon cinnamon
pinch salt
CREAM CHEESE GLAZE
4 ounces cream cheese room temperature
2 tablespoons butter room temperature
¾ - 1 cup confectioner's sugar
½ teaspoon vanilla
INSTRUCTIONS
For the dough, combine in a large bowl the flour, sugar, instant yeast and salt. Heat milk in a small pot over the stove or in the microwave until quite warm. Add butter and stir until melted. Add vegetable oil and vanilla.
Cool milk mixture to lukewarm if necessary. You should barely be able to feel it when you stick your finger in it. Make a well in the dry ingredients and add milk mixture. Add egg and water. Mix by hand or using stand mixer until the mixture forms a very soft, sticky dough. Knead 6-8 minutes using the dough hook attachment or by hand. Add 2-3 tablespoons of flour if the dough looks too much like a thick batter, but it should still be very sticky. If the dough is very dry and easy to handle, add more water to make it sticky. Knead until it feels very smooth. Cover well with plastic wrap and proof for 1½ - 2 hours or until doubled in bulk.
While dough is rising, combine the brown sugar and cinnamon in a small bowl for the filling. Once the dough has proofed, roll out into a rectangle that measures 15x10 inches. Use a small amount of flour on your work surface to prevent sticking. Spread the soft butter over entire surface of the dough, then sprinkle on the brown sugar and cinnamon mixture. Starting from long edge closest to you, roll dough as tightly as you can. When you reach the end, pinch the seam very well to seal.
Using a sharp knife or a piece of string, cut the roll into 8-12 buns. Arrange evenly in a buttered parchment lined 14 x 8 inch pan and cover with plastic. Allow to rise in a warm place for another 45-60 minutes or until doubled in size.
Preheat oven to 375F/190C. Bake rolls for 18-22 minutes or until golden brown and fully cooked in the middles. Set aside to cool while making the frosting.
For frosting, cream together cream cheese and butter until smooth. You can do this by hand or with an electric mixer. Slowly add the powdered sugar, a couple of tablespoons at a time, creaming well after each addition. Add vanilla and beat until smooth.
Frost cinnamon rolls while they are still slightly warm but not too hot. The frosting should not melt. Serve immediately or keep well wrapped in the refrigerator for up to 5 days.

Make 10 Holiday Cookies from One Dough!???? | Christmas Cookie Box
I'm sharing how to make 10 amazing holiday cookies from just one dough; such as 3 kinds of chewy cookies (chocolate chip, gingerbread, and chocolate), snowball cookies, piped cookies, cut-out cookies, icebox cookies, gingerbread man cookies, and Linzer cookies! Bake any cookie with this dough to create your special holiday cookie box for your family & friends.
????The Ingredients:
????The Base Cookie Dough
(Makes about 800g | 28.2oz of the dough)
• Unsalted butter: 226g | 8oz or 2 US sticks
• Powdered sugar: 142g | 5oz
• Salt: 1/4 tsp
• Whole egg: 1 egg
• Egg yolk: 1 (Save the egg white for egg wash)
• All-purpose flour: 285g | 10oz
• Almond flour: 85g | 3oz
Egg wash:
• Egg white: 1
????I baked 10 kinds of cookies today but of course, you do not need to make all of them. Pick the ones you want or different designs as you like!
????Divide the dough for the 3 flavors and make 10 kinds of cookies:
????Vanilla Dough
• The base dough: 400g | 14.1oz (1/2 of the whole base cookie dough)
• Vanilla extract 1/2 tsp
1. Snowball cookies
• Vanilla dough, 100g | 3.5oz (1/4 of the whole dough)
• Toasted pecans: 33g | 1.1oz (1/3 of the vanilla dough) or as much as you like - Mix in the dough and form balls.
2 Piped cookies
• Vanilla dough, 100g | 3.5oz (1/4 of the whole dough)
• Mixed nuts (optional): Attach them before you bake the cookies.
• Dark chocolate (melted): Pipe on the middle of the baked cookies.
3. Holiday wreath cookies
• Vanilla dough: 100g | 3.5oz (1/4 of the whole dough)
• Dried cranberries(optional): Attach them before you bake the cookies.
• Sprinkles: Attach them before you bake the cookies.
4. Chewy chocolate chip cookies
• Vanilla dough: 100g | 3.5oz (1/4 of the whole dough)
• Brown sugar: 16.6g | 0.6oz (1/6 of the vanilla dough)
• Baking soda: 1/8 tsp
• Chocolate chip: 33g | 1.1oz (1/3 of the vanilla dough)
- Set aside some to attach on top right before baking.
* I divided the dough into 15g | 0.5oz each. (Change as you like!)
????Gingerbread Dough:
• The base dough: 200g | 7oz (1/4 of the whole base dough)
• Molasses: 40g | 1.4oz (2 Tbsp)
• Ginger: 3/4 tsp
• Cinnamon: 3/4 tsp
• Allspice: 1/8 tsp
• Clove: 1/8 tsp
• All-purpose flour: 25g | 0.9oz (3 Tbsp)
5. Chewy gingerbread cookies
• Gingerbread dough: 100g | 3.5oz
• Brown sugar: 16.6g | 0.6oz (1/6 of the gingerbread dough)
• Baking soda: 1/8 tsp
• Granulated sugar to coat the dough and sprinkle on top
• White chocolate: Dip the baked cookies.
• Dried cranberries (optional): Attach the chocolate.
* I divided the dough into 15g | 0.5oz balls. (Change as you like!)
6. Gingerbread man cookies:
• Gingerbread dough: The rest of the gingerbread dough
• Sprinkles: Attach them before you bake the cookies.
????Chocolate Dough
• The base dough: 200g | 7oz (1/4 of the whole base cookie dough)
• Cocoa powder: 1 Tbsp + 1 tsp
7. Chewy chocolate cookies
• Chocolate dough: 100g | 3.5oz
• Brown sugar: 16.6g | about 0.6oz (1/6 of the chocolate dough)
• Baking soda: 1/8 tsp
• Milk: 1 & 1/2 tsp
• Dark chocolate: Dip the baked cookies.
* I divided the dough into 15g | 0.5oz balls. (Change as you like!)
8. Linzer cookies
• The rest of the chocolate dough
• Any jam of your choice: Pipe on the middle of the cookie and place a second cookie on top.
• Powdered sugar: Dust on the finished cookies.
9. Stars
• The dough from Linzer cookies
• Egg white (egg wash)
• Sprinkles: Brush egg white and attach the sprinkles before baking

10. Dried fruits & nuts icebox cookies
• Any leftover dough
• Dried fruits: As much as you like.
• Toasted mixed nuts: Mix in the dough and form a square log.
• Egg white (egg wash)
• Granulated sugar: Apply egg wash and attach the sugar around the log. Freeze and slice!
* Chill ALL the cut-out cookies completely before baking them to hold their nice shapes.
???? Bake at 345F | 174C for about 6-15 mins
* Adjust the time and temperature depending on the oven and the size of your cookies.
* Be careful not to bake the chewy cookies too long: With my oven, it only takes 6-7 minutes with the size.
* Bake the cut-out cookies until you see nice golden caramelization around the edge to enjoy the light crispy texture.
