How To make Mocha Pecan Balls
1 c Unsalted butter; softened
1/2 c Sugar
2 ts Vanilla
1 tb Instant espresso powder
1/4 c Unsweetened cocoa
3/4 ts Salt
1 3/4 c Flour
2 c Pecans; finely chopped
Confectioners sugar In mixer or food processor, cream butter with sugar until light and fluffy. Add vanilla, espresso, cocoa and salt. Combine well. Add flour until just combined. Add nuts. Chill dough covered for 2 hours or overnight. Preheat oven to 375 deg. Roll dough into 1 inch balls and arrange on cookie sheets about an inch apart. Bake 12 to 15 min. or until just firm. Cool for 5 minutes on sheets. Toss in batches in a bowl of confectioners sugar. Cookies freeze well. Source: Gourmet, Dec.93 -----

Butter Pecan Cookies
These butter pecan cookies are to die for! To bring out the nutty flavor of the pecans I toasted them lightly in a brown butter I made myself, and they turned out amazing. That brown butter really adds a depth of flavor to the cookies.
This recipe makes 12 cookies. The dough can be made in advance and stored in the refrigerator. The dough can be frozen but I highly suggest letting the dough thaw some before putting it in the oven. Do you ever just want a bite or two of something sweet and or chocolatey, to satisfy a craving? I don’t always have a slice of cake at the ready — shocking considering how much I bake — so I decided to whip up some truffles. Since the weather is cooling down a bit, I used a drop (1/4 cup) of brandy helps to warm things up. I finished them off with a quick roll in the toasted coconut, pecan, and cocoa powder. Soooo GOOD! Does anyone else remember those little chocolates in the shape of liquor bottles? Not sure if I should have had those as a kid, but I guess the 80’s were a different time Enjoy this adult version of that.
I do think these truffles would be a PERFECT Valentine's Day treat in case you're wondering what to make.
Yes you can totally omit the alchohol if desired! To add some interest feel free to mix in toasted nuts, some coffee or candied cherries to make this recipe your own.
