GINGERBREAD COOKIES | gingerbread man recipe
Hello everyone! This is my favorite gingerbread recipe. The cookies are soft and very aromatic. Keeps soft for a long time when stored in a closed container.
INGREDIENTS:
150g honey
100g granulated sugar
1tsp ground cinnamon
1tsp ground ginger
1/2 tsp ground cloves (optional)
2 tsp baking soda
130g unsalted butter (room temperature)
1 egg
400-450g flour
COOKING METHOD:
1. Put honey, sugar, and spices in a saucepan. Bring to a boil, stirring occasionally.
2. Remove from heat and add baking soda, stir (the mixture will foam and increase).
3. Add butter gradually and stir. Add egg and stir.
4. Add sifted flour and knead the dough (I took a hand mixer with hook attachments). Form a ball.
5. Roll out the dough 5mm thick between two sheets of parchment or silicone mats. Put in the refrigerator for 30 minutes-1 an hour.
6. Cut out the cookies and transfer them to a baking sheet covered with parchment paper.
7. Bake at 350F/175C for 10 minutes.

How to Make Finnish Rye Cookies for Christmas ???? Ruiskakut
Finnish Rye Cookies for Christmas are so easy to make and tasty to eat too. I decided it would be fun to make these cookies using my brand new Swedish deep notched wooden rolling pin. This special rolling pin helps create the pattern on Crispbread and this is perfect for out Finnish cookies called Ruiskakut. Adorable to hang on a Christmas tree too. ????
Ingredients:
3/4 cup of rye flour
3/4 cup white flour
1/2 cup of sugar
1/2 cup soften butter
1/4 cup of milk
1 teaspoon of vanilla
Instructions:
1. Cream the butter and sugar until light and fluffy.
2. Mix in milk, vanilla extract, flour in the large bowl.
3. Mix in rye flour until the dough is smooth.
4. Wrap bowl with plastic wrap.
5. Chill in the fridge for an hour.
6. Preheat the oven to 450 F
7. Roll out the dough to 1/4 inch thickness using the Swedish deep notched wooden rolling pin.
8. Cut dough with a circle cookie cutter.
9.. Transfer to a prepared baking sheet.
10. Sprinkle each biscuit lightly with caster sugar.
11. Bake cookies at 350°F (175°C) for 10 minutes.
12. Cool on a wire tray.
Enjoy the rye cookies with coffee or milk. ⛄️????????

Happy May Day everybody!!!
This weekend we are celebrating a traditional festival of spring, the return of growth and life, and the ancient rituals of waking up the earth with dance and song!
It is, also, International Workers’ Day or Labor Day!
So, we are celebrating and honouring all workers, but, right now, especially, those giving of themselves and keeping our communities going out there on the front lines.
So many are unseen and unsung heroes (medical and nursing staff, cleaning and custodial staff, kitchen staff, administrative staff, grocery store staff, and so many more).
This weekend we want to salute them, to make them feel appreciated, to make them feel “seen”!
Sometimes to show your support, the best place to start is “at home”.
So, we wanted to something for the staff at the retirement / nursing home facility down the street from where we live.
The past couple of months have been particularly challenging for them, and they have been taking great risks to continue to care for and bring comfort to their residents through the current situation.
One of our favourite parts about baking is getting to share with others.
So, we decided to bake cookies to share with them from some of our favourite family recipes and, hopefully, bring some joy to their day and smiles to their faces!!
We hope it helps them to feel that they are truly making a difference and how much that means too so many of us.
So, for this episode, we wanted to share one of those recipes with all of you!

Finnish Ribbon Cookie Recipe
1 cup butter, softened or at room temperature
1/2 cup sugar
1 egg yolk
1 tsp vanilla
1/2 tsp grated lemon peel
2 1/2 cups flour
1/2 tsp salt
About 6 tablespoons raspberry or apricot jam
1/2 cup powdered sugar mixed with 1 Tbsp water
Mix flour and salt together, and set aside.
Beat butter, lemon peel, and sugar until creamy.
Beat in vanilla and egg yolk.
Gradually add dry mixture to butter mixture, blending thoroughly until it forms a dough.
Preheat oven to 375 degrees Farenheit.
Shape dough into ropes about 3/4 inch to 2 inches wide and as long as baking sheets allow. Place them about 2 inches apart on uncreased baking sheets.
With the side of your little finger or a small dowel, gently press a long groove down the center of each rope (do not press all the way down to the cookie sheet).
Bake cookies at 375 degrees Farenheit for 10 minutes.
Remove cookies from oven and spoon jam into the grooves. Return to oven for 5 to 10 minutes or until cookies are firm to touch and light golden brown.
Let cool on baking sheet.
When cookies are still warm, drizzle with powdered sugar mixture.
Then cut at a 45 degree angle into 1-inch lengths.
Let cool and then transfer to cooling racks to cool completely.
Store airtight.
Makes about 4 dozen.

Finnish Spoon Cookies are real simple and delicious Finnish cookies to make for the holidays! These spoon cookies or in Finnish Lusikkaleivat are rich, nutty flavor goes great with Cloudberry jam to strawberry preserves or any type of preserves that you enjoy! ????
♥ Ingredients ♥
1 cup of unsalted butter
2 cups of flour
3/4 cup of sugar
1 large egg yolk
1 tablespoon of vanilla extract
jam or preserves of your choice
powdered sugar
Bake for 15 minutes at 325 F degrees
