Pecan snowball Christmas cookies may be the one Christmas Cookie that almost every country has a version of. They are also called Russian Tea Cakes, Mexican Wedding Cookies, Butterballs, Snowballs and even more names from different places that I won’t get into. It’s not clear where exactly these cookies came from but one this is for damn sure. They are DELICIOUS and definitely my favorite Christmas cookie! They are nutty, buttery and should melt in your mouth. Santa is a big fan of these cause the sugar blends right in with that big ole beard he wears.

Pecan Snowball Cookies

Pecan Butterball Cookies Recipe:
Ingredients:
1 cup coarsely chopped pecans
½ lb. (2 sticks) unsalted softened butter
1/8 teaspoon salt
½ cup powdered sugar
2 teaspoons vanilla
2 cups all-purpose flour
Preheat oven to 350 degrees.
Put the coarsely chopped pecans on a baking pan and toast for 5 to 8 minutes, stirring occasionally, until lightly browned. Let cool.
Grind the toasted pecans until finely chopped.
In a bowl mix:
butter
salt
powdered sugar
vanilla
Add chopped pecans.
Sift flour into mixture and blend well.
Take pieces of dough and make approximately 1-1 ½” balls and place on greased cookies sheets or cookie sheets topped with silicone mats.
Bake for 12-15 minutes, rotating the sheets midway through baking so they evenly brown.
Take out and let sit for approximately 1 minute then transfer to cooling rack.
Once cooled completely, roll cookies in powdered sugar and then place cookies in a container filled with powdered sugar to store!
TIP---Cook one cookie sheet in the oven at a time for more even baking and cook in top 1/3 of oven.
Today. I want to share with you a recipe that my family really loves. It's simple. It doesn't take any eggs Some people call it Mexican wedding cookies. We also call it pecan butter balls. And the first thing you do is you take a cup of pecans and I'm going to put it in a pan I'm going to spread around and I'm going to put it in the oven for eight to 10 minutes and let it brown a little bit and cook a little bit. And then we'll take them out. And we're going to be chopping them very finely 7 So as I have the pecans toasting in the oven, I'm going to get started with the cookies. What I'm going to do is take a half a pound of butter that is two sticks. I have soften this to room temperature and I'm going to add it to my mixing bowl. And to that I'm going to take an eighth of a teaspoon of salt. I don't like a lot of salt, so I do use unsalted butter. Also. And to this, I'm going to add a half a cup of powdered sugar. I like to turn my mixer off so that it doesn't get all over the place. And I'm going to go ahead just to make it easier and add two teaspoons of vanilla. Again, I like to do a pretty heavy pour. When I do vanilla, I just love the flavor. And I'm going to do this until it gets fluffy. I'm just going to let it. Go until it gets fluffy.
