MOIST Bran Muffins w/Raisins. THE BEST!!
I’ve tried to perfect muffins MANY TIMES to make them moist and not dry. Especially the next day, different recipes seem to dry out overnight. However! :-) These ones are a sure winner. I like that they don’t have white sugar in them also. I used raisin bran cereal this time, but you can use any brand cereal you like. Please follow along as I explain a little tips and tricks along the way. One of them is using cupcake papers and the difference between using theirs and not using those. Easy Bran Muffins
These quick, easy, delicious, moist bran muffins are made with simple pantry ingredients. Serve these muffins with butter, jam or even a little cheese.

Healthy Raisin Bran Muffins!
You shouldn't have to sacrifice flavors when you want to eat something healthy and these Raisin Bran Muffins give you all the healthy benefits of eating right while packing loads of flavor! They'll keep you feeling full and changed to take on the day!
3/4 cup all-purpose flour (96g)
1/4 cup whole wheat flour (34g)
1/4 cup packed dark brown sugar (50 g)
2 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/4 tsp Allspice
1/4 tsp ground cardamom (optional)
1/4 cup unsalted butter (57g)
1/2 cup milk (118g)
1/2 cup Greek yogurt (118g)
1 large egg (beaten, at room temperature)
1 tsp vanilla extract
2 cups Raisin Bran Cereal of your choice (118 g)
1/4 cup raisins (42g)
1/2 cup finely chopped apples (59g)
*Substitutions *
- Use a neutral flavored oil instead of butter
- Buttermilk instead of milk and yogurt
- Applesauce or Bananas can be substituted for the egg, butter or sugar. Use half the amount of butter, or 2 tablespoons, and add 2 tablespoons of applesauce or mashed bananas. Replace 1 egg with ¼ cup of applesauce or mashed bananas. Substitute the ¼ cup of sugar with ¼ cup of applesauce or mashed bananas.
*Suggested Add Ins*
Some tasty stir-in ideas include dehydrated fruits, fresh apple slices, grated apple, chopped nuts like walnuts or almonds, or your favorite warm baking spices (cloves, mace, allspice, ground cardamom, ground ginger.

These are now my go-to raisin bran muffins, because they are delicious and nutritious and use NO WHITE FLOUR!! So simple and easy to make - they keep well in the fridge or if need be, they can be frozen and enjoyed later :)

Ivo’s Cocoa/Cinnamon Bran Muffins – with whole wheat flour
Makes 9 large or 12 medium sized muffins.
Ingredients
• 150 grams ( 5.3 oz) (~1 ¼ cup) whole wheat flour
• ½ TSP fine salt
• 1 TSP Baking Soda
• 1 TSP Baking Powder
• 1 TBSP Cinnamon
• 3 TBSP Cocoa
• 1 1/2 cups, wheat bran
• 1 ¼ cup buttermilk (or mix regular milk with 1 TBSP lemon juice to make buttermilk)
• 2/3 cup raisins
• ¼ - ½ cup chopped walnuts (or nuts of your choice)
• 1/3 cup olive oil or extra virgin olive oil.
• ¼ cup unsweetened apple sauce
• ½ cup brown sugar (or ¾ cup if you prefer sweeter muffins)
• 2 large eggs, slightly beaten.
• 2 TSP vanilla
• 1/3 cup olive oil (or vegetable oil)
• Optional oatmeal for decorating
Process
• Preheat oven to 375 degrees F.
• Soak raisins in water, set aside.
• In a bowl, mix buttermilk to bran until incorporated – set aside, let stand 5 minutes.
• In a different bowl, add flour, salt, baking soda, baking powder, cinnamon, and cocoa. Mix (a whisk works great), set aside.
• To your bran mixture, add the eggs, vanilla, brown sugar, apple sauce and olive oil – mix to incorporate.
• Now you can mix the bran mixture with the flour mixture and mix until all the flour is absorbed.
• Fold the nuts into the mixture.
• Strain the water from your raisins and fold them in as well.
• Place muffin cups in your muffin baking pan and fill each of them to the same level
• Sprinkle optional oatmeal on top of each muffin.
• Bake for 17 – 20 minutes.
• Let cool and enjoy ????
