Instant Pot Mexican Shredded Beef and Pinto Beans
This is a simple and delicious way to prepare a beef roast at the same time as your pinto beans cook in your pressure cooker. Lots of room for customization in this recipe as you can adjust the seasonings and spice things up according to your tastes.
NOTE: If you only want to cook the beef and skip the beans, drop the liquid down to only 1 cup of water.

Instant Pot Duo 6 Quart:
Today’s Ingredients:
2-3 lbs top sirloin roast (substitute rump roast, top/bottom round, chuck, etc.)
2-3 tsp salt, to season
3 TB vegetable oil
1 large onion, chopped
2 tsp dried oregano
2 tsp garlic powder
2 tsp ground cumin
½ cup pickled jalapeños
4 cups water
2 cups dry pinto beans, picked over and rinsed, but no soaking required
10 oz can diced tomatoes with chilies
Optionals for serving: cooked rice, tortillas, bread, potatoes, fresh cilantro, scallions, sour cream hot sauce, etc.
Instructions:
1. Preheat the Instant Pot on the highest sauté setting while you prepare the beef. Cut the beef into 3 or 4 pieces so that they are all roughly the same shape and size. Pat dry and sprinkle/rub with salt. When the display reads “HOT,” add the vegetable oil to the pot. Add the beef and sear well on all sides, about 4-5 minutes per side. Work in batches if needed to avoid overcrowding the pot. Move the seared meat to a holding dish.
2. Add the chopped onion to the pot and cook for about 6-8 minutes, stirring once or twice, until softened. Then add the oregano, garlic powder, cumin, and pickled jalapeños and stir for just another minute.
3. Add ½ cup of water to deglaze the bottom of the pot. Make sure to scrape up any stuck-on browned bits to avoid getting a “BURN” warning later.
4. Stir in the remaining water, pinto beans, and tomatoes. Nestle the seared meat back into the pot along with any collected juices.
5. Lock and seal the lid and cook on high for 60 minutes followed by a natural pressure release (15-20 minutes is good).
6. Move the meat to a plate and use two forks to shred it, then return it back into the pot with the beans.
7. Serve and ENJOY!
Pinto Beans and Ground Beef

My mom use to make the best pinto beans and ground beef when I was little. She was a single mom with very limited resources and knew how to stretch a meal. We would eat beans and rice with cornbread for about three days.

Pinto Beans and Ground Beef
Ingredients
1 lb. dry Pinto beans
6 cups of water
1 tsp baking soda
1/2 tbs Tony’s Chachere’s (Low sodium is an option.)
1 tsp Slap Ya Mama Seasoning
1 tsp dried thyme
1/4 tsp cayenne pepper
6 cups of low sodium chicken broth
3 tbs unsalted butter
1/4 cup yellow onion, chopped
1/4 cup green bell pepper, chopped
1/4 cup green onions, chopped
1 stalk of celery, finely diced
1.5 lb ground beef
1 tsp onion powder
1 tsp garlic powder
1 tsp oregano
1 tsp chili powder
2 dried bay leaves
1 tsp Adams All Purpose Seasoning (optional)
1 pinch of pepper to taste
5 oz can Hunts Tomato sauce
INSTRUCTIONS
Sort through the beans for rotten or damaged beans and discard . Rinse the beans with cool water . Place the beans in a large pot with the 3 cups of water and 1 tsp of baking soda. Place the lid on and bring to a boil on medium high heat for 30 minutes.
Then turn off the heat. Pour the beans into a colander in the sink and rinse well with cold water . This is the method I use to make the beans less gassy.
Return the beans to the large pot on medium high heat . Add 4 cups of chicken broth and three cups of water . Turn the stove on medium high heat.
Add all of the seasonings , add the bay leaves,and cook with the lid on for 1 hour. Stir occasionally to prevent beans sticking to the pot.
Dice up the vegetables while the beans are cooking. In a large skillet on medium high heat, add 2 tbs of butter and saute the vegetables for 3-5 minutes. Then add the ground beef and cook for 5-7 minutes until brown. Turn off the heat and drain off the grease. Then add the ground beef and vegetables to the pot of beans.
Add 1 tbs of butter and Worchestire sauce. Do a taste test to see if you want to add more seasoning. For a creamier beans , use the back of a spoon to mash some of the beans against the side of the pot.
Stir well and return the lid to the pot. Reduce the heat to medium and cook for 1 hour or until tender . Total cooking time is about 2 hours.
* Add more chicken broth or water if the liquid is getting too low before it’s done.
Serve the Pinto beans and ground beef in a bowl on top of cooked white rice and or with some cornbread .

Okay ! Heres the southern style bbq baked beans recipe!! So as stated before in previous post.. in my opinion ..bake beans aint baked beans without that meat sopped up in there!!! U can add or take away as much as u want !!! U can add more meat, less meat, turkey, pork, sausage, etc .. and please make sure if you are adding ground meat its SEASONED real good before u add it to the beans ... u can taste the beans as u mix , since the meat u are adding will be cooked already.. adjust the measurements of ingredients I used and so on.. make it your own! Honestly.. its hard to give exact measurements with this one! Its just a feeling!! Just as long as the flavor u like is sopped up in there .. ur good boo!!! This recipe serves about 6 ppl .. you can always freeze the leftovers .. if you need more, just double the recipe! Here’s a tip.. to keep u from getting “gassy”.. add 1 tsp of baking soda to the beans.. Mmkay *Previous post *
Lets talk bbq baked beans ... sooooo growing up.. my mama ALWAYS put meat, ( ground beef) in the baked beans... along with Mustard, onion, bell peppers, bbq sauce, lots of brown sugar, seasoning, more seasoning (????) .. butter, butter, butter, and so on... now I hear there are some folks out there who have never heard of beef in the baked beans! And I said Oh MY LORD????????????... well hunny..I gotta good as hell baked beans recipe for ya! U gotta have that meat sopped up in there!! Just ljke potato salad .. baked beans can make or break the cookout.. baked beans and potato salad are like kissing cousins!!! Like collared greens and cornbread.. u cant have one without the other at the bbq!! ????????♀️????????♀️... anyway... video coming next... do u put meat in ur beans or nah!? My husband is completely happy with dried beans, fried potatoes, and cornbread. He likes dried butterbeans, northern beans, and pinto beans. My favorite is pinto beans. I used to cook them on my stove for a long time and worry about having to add water as they cooked. I found this recipe years ago and what a game-changer! No more having to watch the beans cook on the stove. I'm sure that you will think these won't taste right with the oregano and chili powder but you will have to just trust me. Once you get all ingredients in the crockpot you can just forget them for 5 hours. SO EASY!!
