Slow Cooker Baked Beans Recipe
How to make BAKED BEANS in a slow cooker. Step by step instructions explaining the steps to follow to make delicious baked beans with bacon and maple syrup. This recipe can be made a day or two in advance!
Here are the Ingredients Needed -
2 cups White Pea Beans
5 cups Cold Water
1 Onion
1/2 tbsp Salt
2 tsp Cider Vinegar
½ tsp Mustard
¼ cup 100% Pure Maple Syrup
½ tsp Brown Sugar
½ cup Ketchup
Pinch Pepper
¼ lb Bacon, cut into ½” – 1” pieces
I like to make this recipe for special occasions and holidays therefore I plan to make these baked beans in stages over a day or two.
And I plan my schedule as follows –
Steps to take two nights before –
Rinse beans with cold water. Place the beans into a large bowl and cover with cold water, soak overnight in fridge.
The next day -
Drain. Place beans in a large pot, and add 5 cups of water. Cover and heat to boiling then simmer for 30 – 75 minutes or until tender.
Once tender, drain. TIP to making delicious tasting beans is you must taste your beans before draining them. This will allow you to decide if they are tender enough for your liking. The bean texture will not change while cooking in the slow cooker therefore you must be certain that they are tender enough. This is why it reads 30 - 75 minutes to simmer because it depends on how hot the beans are boiling which impacts how long it takes. Generally, with my stove top it takes a good 60 minutes at a nice simmer to cook the beans.
The beans are cooked at this point however still requires seasonings and sauce to cook in for 7 hours.
This is where I prefer to place the cooked beans into a large bowl, cover and place into the fridge until the next morning. That’s it for now.
The following day -
Slice onion and place onto the bottom of a oven-proof casserole dish or slow cooker and set aside.
In a large bowl, add salt, vinegar, mustard, maple syrup, ketchup and pepper. Mix together and add beans to this mixture. Combine together. Pour this mixture into the casserole dish or slow cooker over top the sliced onions.
Add enough water to just cover the top of the bean mixture. This is about 1/4 cup of water.
Add slices of uncooked bacon on top. Cover and bake in oven at 250 F for 7 hours or on low in slow cooker. Add extra water, if needed.
Main Tip – when boiling the beans, taste to ensure they are tender. Simmer longer if needed. If you want to make delicious tasting baked beans, it’s imperative that this step is taken. They need to be tender at this point because the beans will not soften in the oven. Trust me on this one! I am speaking from experience
This baked beans recipe is easy to make and is a nice addition to any special occasion or holiday gathering with friends and family!
