Carrot Cake :
- 250 gr All Purpose Flour ( 1 cup + 2/3 cup)
- 1/2 tsp Baking Soda
- 1 1/4 tsp Baking Powder
- 1 1/2 tsp Cinnamon
- Pinch of Nutmeg
-1/2 tsp Salt
- 160 gr Light Brown Sugar ( 3/4 cup )
- 150 gr Carrots ( 5.5 ounces)
- 110 gr Butter ( 1 stick melted )
- 40 gr Oil ( 3 tbsp)
- 1 1/2 tsp Vanilla
- 3 Large Eggs OR 4 medium eggs

CARROT CAKE RECIPE
Ingredients
2½ Cups | 300g Carrots, shredded
4 Eggs
2 Cups | 400g Sugar
1 tsp Vanilla
1½ Cups | 375ml Vegetable Oil
2 Cups | 250g Flour
2 tsp Baking Soda
2 tsp Cinnamon
½ tsp Salt
½ Cup | 1 Stick | 115g Butter
7oz | 200g Cream Cheese
3 Cups | 375g Icing Sugar | Powdered Sugar
Instructions
Add the shredded carrots to a medium sized mixing bowl.
Crack in the 4 eggs, add in the vanilla, sugar and oil and mix well until everything is combined.
In a clean bowl sieve together the flour, baking soda, cinnamon, and salt.
Pour the wet ingredients into the dry and fold together with a wooden spoon until you can no longer see any dry flour.
Pour the cake batter into one 8 inch or two 7 inch lined and greased cake tins. Bake in a 170C | 340F oven for 30-40 minutes or until a skewer comes out clean. Leave to cool completely before decorating.
Beat room temperature butter in a stand mixer or with a hand mixer for 5 minutes until pale and light and doubled in volume.
Add the cream cheese to the butter and beat for a minute until well combined.
Sieve the icing sugar or powdered sugar to remove any lumps and add it to the butter and cream cheese in thirds, beating well in between each addition.
Use a spatula to scrape down the sides of the bowl and beat for a further minute until the frosting is fluffy.
If you have made two cakes spread a cup of cream cheese frosting over one cake before topping with the next cake. Cover the cake with the cream cheese frosting using an offset spatula.
Leave the cake and frosting to set for a few hours before cutting a slice and enjoying.

Servings: 8-10
Ingredients
Grated Carrot - 2 1/2 Cups
Maida/all-purpose Flour - 2 Cups
Baking Soda - 2 Tsp
Salt - 1/2 Tsp
Cinnamon Powder - 1 Tsp
Egg - 4 Nos
Oil - 1 1/2 Cups
Vanilla Essence - 1 Tsp
Sugar - 1 Cup
Brown Sugar - 1 Cup
Cream Cheese Frosting
Method:
1. Add maida/all purpose flour, baking soda, salt and cinnamon powder to a sieve and strain them in a bowl.
2. Crack open eggs in a bowl and whisk them well.
3. To this, add oil and whisk again.
4. Add vanilla essence, white granulated sugar and brown sugar.
5. Combine everything well to make sure there are no lumps.
6. Grate the carrots and add them to the prepared batter. Mix well.
7. To the wet ingredients, add the dry flour mixture gradually and mix. Keep it aside.
8. Grease two cake tins with butter and line them with butter paper.
9. Divide the cake batter between both the tins and gently tap them to settle the batter evenly and release the air bubbles.
10. Pre-heat the oven at 180 degree centigrade for 15 mins.
11. Place the cake tins inside the oven and bake the cakes for 45 mins at 180 degree centigrade.
12. Remove the cake tins from the oven and let them cool down.
13. Remove butter papers from the cakes and apply cream cheese frosting on one of the cakes. (cream cheese frosting link given above)
14. Now place another cake on the frosting and apply it again on the top with a thick layer.
15. Spread it out evenly and garnish with chopped walnuts or any other ingredients as desired.
16. Mildly flavoured, yummy carrot cake is ready to be served.

Incredibly Moist Vegan Carrot Cake!
Enjoy a delicious vegan twist on the classic carrot cake with this Vegan Carrot Cake recipe. It's incredibly moist and flavorful, just like the traditional version, but it's entirely plant-based, meaning it doesn't contain any eggs or dairy.
Prep Time: 5 minutes | Cook Time: 45 minutes | Total Time: 50 minutes | Servings: 9
INGREDIENTS:
• 3 cups all-purpose flour
• 2 cup granulated sugar
• 1 tsp vanilla powder
• 1 tsp salt (
• 1 tsp ground cinnamon (
• 2 tsp baking soda
• 1½ cups walnuts (
• 2/3 cup vegetable oil
• 2 cup of cold water
• 2 tbsp apple cider vinegar
• 2 tsp vanilla extract
• 2 cups chopped carrots
Easy Vegan Cream Cheese Frosting:
• 4 tbsp vegan cream cheese
• 1/2 cup vegan butter
• 2 cups powdered sugar
INSTRUCTIONS:
1. Preheat your oven to 350°F and prepare two round cake pans by greasing them or using parchment paper.
2. In a large bowl, mix together the flour, sugar, vanilla powder, salt, cinnamon, and baking soda. Set this aside.
3. Toast the walnuts on a baking pan for about 5 minutes, then chop them. Add half of the chopped walnuts to the flour mixture.
4. In another bowl, combine the vegetable oil, water, vinegar, and vanilla extract.
5. Shred the carrots in a food processor and add them to the oil mixture. Stir well.
6. Pour the carrot mixture into the flour mixture and stir until combined.
7. Pour the batter into your prepared cake pans and bake for 35 minutes or until a toothpick comes out clean when inserted in the middle.
8. Let the cakes cool for about 10 minutes, then remove them from the pans and allow them to cool completely.
9. To make the Vegan Cream Cheese Frosting, mix vegan cream cheese and vegan butter until fluffy. Gradually add powdered sugar until you reach the desired consistency.
10. Spread frosting on one cake layer, top with chopped walnuts, place the second layer on top, and frost the top and sides. Garnish with more chopped walnuts. Enjoy!
