How To make Cranberry Corn Muffins

3/4 c Flour
1/2 c Whole Wheat Flour
1 c Yellow Corn Meal
1/3 c To 1/2 c Sugar; to taste
2 ts Baking Powder
1/2 ts Baking Soda
1/4 ts Salt; optional
2/3 c Buttermilk
1/3 c Orange Juice
1/3 c Vegetable Oil
1 Egg
4 ts Grated Orange Rind
1 c Fresh Cranberries;coarse chp
Preheat oven to 400. In a lg. bowl, combine the flours, meal, sugar, baking powder, baking soda, and salt. In a 2-c measure or sm. bowl, combine the buttermilk, orange juice, oil, egg, and orange rind. Add buttermilk mixture to the flour mixture, stirring the ingred. til they are just moist. Stir in the cranberries. Distribute the batter among 12 greased muffin cups. Place the muffin tin in the hot oven, and bake the muffins for 20-25 min.

Cornbread Muffins w/ Cranberries, Chocolate Chips, and Pecans
Learn how to make Cornbread Muffins with Cranberries, Chocolate Chips, and Pecans.
I rehydrate the cranberries in Orange Juice, about 1 oz of Tequila and 2 T of ginger paste (optional).
Optional Glaze:
1 1/4 powdered sugar
2T of Orange and or Cranberry Juice
1T Vanilla Extract (optional)
Mix to desired thickness

Episode 22: Cranberry Orange Cornbread Muffins
Looking for a great Bread Recipe for your Thanksgiving Dinner and don't want to have Rolls or Regular Cornbread? Check out my twist, Cranberry Orange Cornbread Muffins!! You can also make Cornbread instead of Muffins!!
1 cup self rising cornmeal, sifted
1 cup self rising flour, sifted
1/2 tsp ground cinnamon
3/4 cup white sugar
1/2 stick (1/4 cup) unsalted butter, melted
2 whole eggs, room temperature
1 cup orange juice, room temperature
1 1/4 cups dried cranberries + 1 tsp self rising flour
Note: If you don't have Self Rising Flour or Cornmeal, you can use All purpose flour and regular cornmeal just add 2 tsp baking powder and 1/2 tsp salt. If you like your Muffins sweeter, add a little more Sugar and for a little more orange, you can add some Orange Zest.
Preheat Oven to 400 degrees
In a large bowl, add all ingredients and mix everything together until nice incorporated. In a Muffin Pan lined with Muffin Cups or Greased pan, using a Ice Cream Scoop, fill pan up 3/4 way inch. Do not fill it up on top. Bake Cornbread Muffins for 20-25 minutes or until nice and golden brown. Remove Muffins from the oven and let them cool on a wire wack. Serve cool or room temperature.

“Cornbread” Muffins: Three Ways
Jalapeno “Cornbread” Muffins
Ingredients:
½ cup + 1 Tbsp. almond flour
3 Tbsp. coconut flour
¼ tsp. coarse salt
1 tsp. baking powder
¼ cup coconut oil, melted
¼ cup powdered erythritol
1 large egg
1 large egg yolk
¼ cup unsweetened almond milk
½ cup chopped/diced jalapeno
Directions:
1. Preheat oven to 325 degrees. Grease a 12-cup muffin tin and set aside.
2. In a medium bowl, whisk together almond flour, coconut flour, salt and baking powder.
3. In a separate medium bowl, whisk together coconut oil, erythritol, egg and egg yolk until combined. Whisk in almond milk. Pour wet ingredients into the bowl of dry ingredients and use a spatula to stir just until combined. Fold in jalapeno and cheese.
4. Spoon the batter into the muffin cups and bake 20-22 minutes. Remove and allow to cool.
Makes 10 (1.5 gm carb/muffin)
Cranberry “Cornbread” Muffins
Substitute ½ cup chopped fresh or frozen cranberries in place of jalapeno
Makes 10 (2.1 gm carb/muffin
Cheese “Cornbread” Muffins
Substitute ½ cup shredded sharp cheddar cheese in place of jalapeno
Makes 10 (1.6 gm carb/muffin)

These moist cranberry orange muffins are my guilty pleasure which is why I stockpile cranberries in my freezer every winter! They make for a great breakfast or snack and are loaded with juicy cranberries. Hope you love them as much as I do!

Dry:
◾️2 ½ cups all-purpose flour
◾️2 tsp baking powder
◾️¼ tsp salt
Wet:
◾️½ cup unsalted butter, room temp
◾️1 ¼ cup sugar
◾️2 eggs, room temp
◾️1 whole orange juiced and zested
◾️½ cup whole milk, room temp (2% works as well)
Add 2 cups roughly chopped cranberries and bake in oven on 350 for 25-30 min
