How To make Country Bran Muffins
1 c 40% Bran Flakes Cereal
1 c Boiling Water
2 1/2 c Unbleached Flour, Sifted
2 1/2 ts Baking Soda
1/2 ts Salt
1/2 c Shortening
1 1/2 c Sugar
2 ea Large Eggs
2 c All-Bran Cereal
2 c Butter/Sour Milk
Combine 40% Bran Flakes and boiling water in bowl. Let stand 10 minutes. Sift together flour, baking soda and salt; set aside. Cream together shortening and sugar in large mixing bowl until light and fluffy, using electric mixer at medium speed. Add eggs, one at a time, beating well after each addition. Stir in Bran Flakes mixture and all-bran into creamed mixture. Add dry ingredients alternately with butter/sour milk to creamed mixture, mixing just enough to moisten. Spoon batter into well-greased 1 1/2-inch muffin-pan cups, filling 2/3rds full. Bake in 400 degree F. oven 25 minutes or until golden brown. Serve hot with butter and jam. NOTE: Batter can be stored for a few days in the refrigerator. Bake as directed.

Heirloom baking continues with these icebox bran muffins. The ready-to-use batter stored in the fridge means you can have fresh, hot muffins in about 15 minutes.
Icebox Bran Muffins
1 cup vegetable shortening
3 cups white sugar
4 large eggs
2 cups boiling water
2 cups 100% Bran cereal (you can use the All Bran if you can't find 100% Bran)
1 quart lowfat buttermilk
2 teaspoons salt
5 cups all-purpose flour
5 teaspoons baking soda
4 cups Kellogg's All Bran cereal
Pour the boiling water over the 2 cups of 100% Bran. Let stand. Cream the shortening and sugar in a large mixing bowl until fluffy. This might take close to 6 minutes. Add the eggs, one at a time with the mixer on low. Beat on medium until fluffy. Add the salt and mix to combine. Combine the flour, soda and 4 cups of All Bran in a large bowl and set aside.
Pour the buttermilk in the 2 cups of hot cereal and water. Add the buttermilk mixture to the mixing bowl and mix until combined. Pour the wet mixture into a large lidded container. Pour the dry ingredients over top and mix by hand until just combined.
Bake cupcake-sized muffins in a 400°F, 200°C, gas mark 6 oven for 15 minutes.

Joanie’s Bran Muffins
(For a 12” Camp Oven)
Ingredients:
1 ½ cups flour
1/3 cup brown sugar, packed
1 tbsp. baking powder
1 tsp. cinnamon
¼ tsp. salt
1 cup whole milk
1 egg
1/3 cup unsweetened applesauce
2 tbsp. oil
½ tsp. vanilla
1 ½ cups raisin bran cereal
¾ cup chopped walnuts or pecans
Directions:
1. In a cool 12” Camp Oven, place canning jar lid bands, (9) into the bottom of the oven. Place paper baking cups inside jar bands.
2. Mix flour, sugar, baking powder and cinnamon in a large bowl; set aside. Beat egg, milk, oil, applesauce, vanilla and salt in a medium bowl until well mixed. Add raisin bran cereal into the medium bowl and let stand for 5 minutes.
3. Add wet mixture to dry flour mixture; stir just until moistened (Batter will be lumpy). Add nuts and/or fruits**, if desired, into the batter. Spoon batter into paper baking cups and place lid on oven.
4. Place 10 briquettes under the oven and 19 briquettes on the lid (29 briquettes total). Bake at 400°F 20-25 minutes (Allow time for oven to come up to temperature). A toothpick inserted into muffin will come out clean when the muffins are done. Transfer baked muffins to a cooling rack. Enjoy!!!
Variations: Prepare batter as directed; Add 3/4 cups flaked coconut, add 1/2 cup more raisins, add 1/2 cup chopped dates, add 3/4 cup blueberries or add 3/4 cup finely chopped apple.

Homemade Apple Raisin Bran Muffins
These are the BEST EVER bran muffins you ever did have! Try out this classic bran muffins with a twist ... apples. Maybe it's an underwhelming twist, but I promise you that apples make this easy raisin bran muffins recipe pop with a bit of excitement. They are AWESOME RAISIN BRAN MUFFINS that you too will enjoy! These muffins are a result of our Aldi grocery haul recently. Aldi...what a store!
Ingredients:
1/4 cup vegetable oil
1 cup Greek yogurt
1 teaspoon ground cinnamon
1 egg
3/4 teaspoons baking soda
1/2 teaspoon salt
1 cup flour
1 cup raisin bran
1/3 cup sugar
1 apple
Mix ingredients into a large bowl.
Chop apple into small pieces, and include with your muffin mix.
Spoon into an oiled muffin tin.
Bake for 30 minutes at 350°F.
Serve immediately afterwards.
