How To make Chocolate Fudge Variations
-Nancy Speicher DPXX20A 3 c Sugar
1 Env unflavored gelatin
1 c Milk
3 oz Unsweetened chocolate (sqs)
1 1/4 c Butter or margarine
2 ts Vanilla extract
1 c Walnuts; coarsely chopped*
*For delightful variations, in place of walnuts stir in 1 cup of any of the following: coarsely chopped pecans, coconut, whole toasted almonds, party mints, butter mints or crushed peanut brittle. 1. Butter an 8x8x2" pan.
2. In a 3 1/2-quart saucepan, mix sugar with dry gelatin. Add milk,
corn syrup, chocolate and butter. 3. Cook over medium heat, stirring frequently, to 238F on candy
thermometer, or until a little in cold water forms a soft ball that flattens when removed from water. 4. Remove from heat; pour into a large mixing bowl. Stir in vanilla.
Cool 25 minutes. 5. Beat with wooden spoon until candy thickens. Stir in walnuts.
Spread in prepared pan. Let cool; then cut into squares. Makes about 2 1/2 lbs.

When we posted this recipe for batik cake so many of you commented about the different variations around the world. So for all you South Africans out there, this one’s for you! There seem to be many names for this dessert in South African including fudge, brownies, smudge and munchies but they all seem to be about the same. We’re starting with Marie or Maria biscuits broken into small pieces. We learned the hard way that some of you are VERY passionate about the name of these biscuits but I’m here to tell you that they’re all the same, just with a different name depending on the country.

Ingredients:
3 Cups of Dark Chocolate Chips (approx. 520g)
400g Can of Sweetened Condensed Milk
1 Teaspoon of Vanilla Extract
1/2 Cup of White Mini Marshmallows
1 Cup of Chopped Walnuts (optional)
Preparation Time: About 5 minutes
Chilling Time: About 2 hours

Easy Chocolate Fudge Recipe
This is the easiest recipe you can get for an homemade chocolate fudge. It takes only 5 to 10 minutes, no cooking involved just some chocolate melting and the result is smooth, creamy and ... chocolaty. The main ingredients are sweetened condensed milk and chocolate. You can make a lot of variations by using coffee, nuts, fruits, lavender, orange or lemon zest, and the list can go on.
Ingredients:
Makes about 9-12 servings
14 oz (400 g) sweetened condensed milk
10 oz (300 g) bittersweet chocolate (minimum 55% cacao)
pinch of salt
1 tsp vanilla extract
1 tbsp unsweetened cocoa powder
1/2 cup toasted walnuts, chopped, optional
orange or lemon zest, optional
dried fruits, optional
Directions
1. Line a 8X8 inch baking pan with foil. Break or chop the chocolate into small chunks.
2. Place the chocolate and condensed milk in a double base saucepan, over low heat, stirring occasionally. Once melted add vanilla extract, cocoa powder and pinch of salt and stir well to combine. Add orange or lemon zest and fruits if used.
3. Remove from heat and transfer to the prepared baking pan. Press the toasted nuts over the top.
4. Let it chill in the fridge for about 1 hour until set, and cut into squares.

INGREDIENTS
Simple Fudge :
300 grams Chopped Chocolate ( Semi sweet/ Bitter Sweet) as per preference
200 grams ( ½ tin ) Condensed Milk
15 grams ( 1 tbsp ) Butter ( salted/unsalted)
Flavourings :
1 tsp Coffee Granules + 1tsp Hot water
or
1 tsp Vanilla extract
or
2 tsp Rum
Add ons :
150 grams Roasted nuts ( Chopped ) + Raisins
(Cashews/Almond/Pistachios/Hazelnuts/Dried Cranberries/Dried blueberries)
