Unfortunately, though, most of us have relegated meatloaf to mere childhood memories and don't ever really allow ourselves the simple pleasure of loafing it up. But we would do anything for meatloaf! Not the singer, obviously, but the dish, and so we worked hard to develop a recipe that takes the classic meatloaf and firmly establishes it in the 21st century. Filled with ham, cheese, garlic & herb cream cheese, and eggs, this ain't your mama's meatloaf, folks!

You'll Need:
For the meatloaf:
- 1½ lbs ground beef
- ½ cup bread crumbs
- 2 eggs
- 1 onion, diced
- 2 garlic cloves, minced
- salt & pepper to taste
For the filling:
- 2-3 ham slices
- ¾ cup garlic & herb cream cheese
- 3-4 Gouda or Swiss cheese slices
- 3 eggs
Here's How:
1. Preheat the oven to 350°F. Grease a 9 x 5-inch loaf pan with butter and swirl some bread crumbs around the inside of the pan so they stick to the butter. Combine the ground beef, bread crumbs, eggs, onion, salt, and pepper, and transfer the meatloaf mixture to the greased loaf pan. Press a tall glass into the loaf pan horizontally to create an indent in the center.
2. Line the indent with the ham slices.
3. Cover the ham with the garlic & herb cream cheese.
4. Cover the cream cheese with the cheese slices.
5. Crack 3 eggs over the cheese.
6. Transfer the loaf pan to the oven and cook for 60 minutes.
This stuffed meatloaf is sure to be the ultimate crowdpleaser! The BEST Turkey Meatloaf Muffins EVER!!!!
Hi!!! Okay, so apparently I “cook” now, idk. But I was inspired on this rainy day to make something warm & delish, so I modified my Turkey Meatloaf Recipe into Turkey Meatball Muffins & whipped up (lol! so funny) some roasted broccoli too.
This was a lot of fun & it all tastes soooo good!!!! I feel renewed now, especially after that arduous chili recipe way back ????????♀️
I really didn’t use a recipe for this, so please take my instructions & ingredients lightly- I’m sure you can modify as you like!

Turkey Meatloaf Muffins:
• 1.25 lb ground turkey
• Veggies!!! I used: mushrooms, onions, spinach & zucchini
• Worcestershire Sauce
• bread crumbs
• garlic
• ketchup (tomato paste works too!)
• salt & pepper to taste
• shredded parm rocks in this! But I opted not to since I’m avoiding dairy at the moment
Preheat oven to 425*
- Sauté diced onions & mushrooms in olive oil for roughly 5 minutes.
- Shred or dice other veggies- spinach & zucchini
- In large bowl, mix veggies, bread crumbs, ketchup & Worcestershire sauce into the ground turkey
- Mold into balls & put in pre-greased muffin tins
- top w ketchup
Bake for 30-40 minutes
Roasted Broccoli:
• lemon juice
• evoo
• garlic
• salt & pepper
• shredded parm
In a large bowl, toss rbroccoli florets in evoo, lemon juice & salt
Arrange on baking sheet & bake for 15-20 mins until lightly brown
Remove from oven & put broccoli back in bowl & toss w shredded parm & pepper

Meat Loaf

Ingredients
1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)
Directions
Preheat the oven to 325 degrees F.
Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.
