How To make Chili Bean Casserole
1/2 lb Uncooked red kidney beans
2 pt Water
1 tb Olive oil
1 lg Onion, finely chopped
1 ea Garlic clove, pressed
1/2 lb Mixed vegetables*
1/2 ts Basil
1/2 ts Cumin
1/4 ts Cayenne pepper
1 tb Chili powder
14 oz Tomatoes, chopped finely+
2 tb Tomato paste
3 tb Red wine++
2 oz Bulgur wheat+++
1 1/2 pt Stock
2 tb Lemon juice
Salt & pepper Soak beans. Drain & rinse well. Bring to boil in fresh water & boil fast for 10 minutes. Reduce heat & cook for 40 minutes, depending upon the freshness of the beans. Older beans will take longer to cook. Drain, reserving the liquid for stock later. Heat the olive oil in a large pot, gently fry the onion & garlic for a few minutes. Add the chopped vegetables, cooked beans, basil & spices. Stir well & cook for 5 minutes. Add the tomatoes, tomato paste, bulgur wheat & 1 pint of the stock. Bring to a boil, cover the pot, reduce heat & simmer gently for 30 minutes. Add the lemon juice & the rest of the seasonings. Add more stock if necessary. Cook for a further 20 minutes. Serve. * Use a mixture of carrots, bell peppers, celery + Either fresh or canned tomatoes will work ++ You can omit the wine or substitute with a little tomato juice or extra stock +++ If you can't get bulgur wheat, try using brown rice

GARLIC GREEN BEANS⤵️
1 lb green beans
2 TBSP salted butter
1 tsp Garlic powder
1 tsp Salt
Red pepper flakes,
Minced/ grated garlic, as much or as little
1. Wash green beans. Cut the ends off green beans.
2. Melt your butter (only melt half way through)
3. Once butter is 1/2 way melted, add salt, garlic powder & red pepper flakes. Cook until butter is all the way melted and starts to bubble
4. Then add green beans and cook until they become a bright green.
5. Then add grated garlic, cook for 1 minute and then turn off heat

Chili Cornbread Bake
INGREDIENTS:
2 Boxes Jiffy Cornbread Mix
2 Eggs
2/3 Cup of Milk
1-2 Tsp. Sugar (OPTIONAL)
2 Tbsp. Olive Oil
1 Sweet Onion (diced)
2 Lbs. Lean Ground Beef
2 Packets of Chili Seasoning
1-2 Cans Tomato (diced or crushed)
1-2 Cups Shredded Mexican Cheese Blend
Topping:
Sour Cream
Green Onion
Other Items:
Nonstick Cooking Spray
Parchment Paper
Cut into squares, top with sour cream and green onions and serve!

GREEN BEAN CHILI - Submitted by Mary Jane
1 lb ground beef
2 (38 oz) cans green beans, drained
2 (15 oz) cans diced tomatoes
1 pkg chili mix
Optional Garnishes:
sour cream
shredded cheese
crackers
Brown and drain ground beef. Add all ingredients to slow cooker. Cook on high for 2-4 hours.
COZY COFFEE - Submitted by Jennifer (I only did half of this recipe)
2 cups powdered creamer
1.5 cups hot cocoa mix
1.5 cups instant coffee
1.5 cups sugar
1 tsp cinnamon
Mix all ingredients together and store in an airtight container. To serve: Add 4 heaping tablespoons per 1 cup of boiling water.
MEXICAN BEAN DIP - Submitted by Regina
8 oz cream cheese, softened
14 oz can chili with beans
8-12 oz jar salsa
8 oz shredded Mexican blend cheese
Sliced black olives (optional)
Grease 8x8 baking dish. Press cream cheese into the dish as bottom layer. Then layer remaining ingredients in order listed above. Bake at 350 for 20-25 minutes until bubbly to the center. Serve with tortilla chips.

1 stick butter
1 carton sliced mushrooms, finely chopped
1/4 cup all-purpose flour
1.5 cups milk
1 cup sour cream
1 cup shredded mozzarella cheese
salt and pepper to taste
2 cans French style green beans, drained
1 bag French fried onions
Preheat oven to 350. Melt butter in large skillet over med-high heat. Add mushrooms and sauté for 5 minutes. Add flour and cook for 1 minute. Add milk, sour cream, and cheese. Stir together; let it come to a bubble. Add salt and pepper. Add drained green beans and mix. Transfer to 9x13 and spread onions on top. Bake at 350 for 45 minutes.
