How To make Sunshine Bean Casserole
Ingredients

cup
red beans, canned, drained
2
cup
lima beans, canned, drained
2
cup
garbanzo beans, canned, drained
1
pound
beef, ground
1
each
onion, chopped fine
1
each
garlic, clove, minced
1/4
cup
brown sugar
2
tablespoon
mustard, prepared
1/2
cup
ketchup
1
teaspoon
cumin powder, optional
1/4
cup
wine, red
1
salt, to taste
1
pepper, to taste
Directions:
Put drained beans into a 2 1/2-quart casserole; mix lightly and set aside. In large skillet cook ground beef, onions and garlic until meat is lightly browned; stir in remaining ingredients (except beans). Add skillet mixture to beans in casserole; mix together. Cover and bake for about an hour at 325 degrees or simmer the mixture in a crockpot for 3 to 4 hours.
NOTES: An easy bean casserole. The recipe calls for red beans, lima beans and garbanzos, but any combination of cooked or canned beans can be used. Pick your own favorites.
Serves 6 to 8.

Quick & easy one skillet Cheesy ground beef & green bean casserole
1 1/2 pound ground beef
1 med onion
4 oz cream cheese
1/2 cup milk
1 1/2 cup Cheddar or Mexican blend cheese
Garlic jalapeño seasoning
2 cans green bean drained
1 cup cheddar or Mexican blend cheese
1 cup Mozzarella cheese
Optional add 1 can drained rotel
Cook ground beef and onion, drain and add cream cheese and milk stir until melted add 1 1/2 cups cheddar cheese or Mexican blend, stir until melted Add seasoning and add 2 cans drained green beans mix up good then add 1 cup cheddar or Mexican blend cheese and 1 cup mozzarella cheese bake at 425 degrees for about 15 minutes until cheese is brown and bubbly.

This is an scrumptious vintage recipe that I like to make from time to time. My husband and I love this one. And it is super easy to make, which on some days that is certainly a plus.
On this particular day it certainly was. I had a sick dog, a teething toddler and lets not forget about the full moon. ????And I am very happy to report both seem better today.

Ingredients
1 lb ground turkey ( or beef)
1/2 yellow onion
1 package taco seasoning mix
1 30 oz can pinto beans (or two cups of leftover pinto beans)
1 10 oz can of tomatoes with green chilies
1 box of jiffy mix or make your own corn meal batter using the following:
1 cup self rising corner meal
1 egg
About 1 to 1 1/4 Cup of Milk

Ingredients
• 17.6-ounce jar salsa Verde
• 12 corn tortillas
• 15.5-ounce can black beans drained and rinsed - divided
• 8-ounces Cheddar and Monterey Jack cheese
• 6 large eggs
• Kosher salt
• Freshly ground black pepper
Garnish
• Crumbled Cotija cheese
• Pico de Gallo
• Avocado sliced thin
• Fresh cilantro leaves
• Sour cream
Instructions
Preheat oven to 375°F/190°C.
Spread ¼ cup of the salsa Verde on the bottom of the Stone Rectangular Baker With Tray.
Overlap six of the tortillas on top of the salsa to cover bottom of dish, slightly pushing up the sides.
Pour half of remaining salsa over tortillas. Top with half of the beans and half of the Cheddar and Monterey Jack cheese. Place the remaining six tortillas over the cheese. Drizzle with ¾ cup of the salsa. Top with remaining beans, salsa, and Cheddar and Monterey Jack cheese.
Bake casserole for 15 minutes, until the cheese is melted.
Using the back of a spoon, create 6 small divots in cheese. Crack eggs into divots; season eggs with salt and pepper.
Bake an additional 15 minutes, until egg whites are just barely set, and the yolks are still runny. The whites will still be jiggly but custardy and will continue to set while they rest.
Garnish with cotija, Pico de Gallo, avocado, and cilantro. Let sit until set, about 3 minutes. Dollop with sour cream before serving.
