shredded Cook chicken in water with seasoned salt. This makes the chicken stock. Cut meat into bite-size pieces. Save stock. Melt butter in large saucepan. Stir in flour. Add milk and stock. Cook over low heat, stirring constantly until thick. Cook noodles and drain. Cook spinach and drain. To the cream sauce, add sour cream, lemon juice and other dry ingredients. Mix all ingredients except chicken and cheese. In a buttered 3 quart casserole, alternate layers of sauce with chicken. Top with cheese. Bake at 350 degrees for 25 minutes. Serves 10-12. Creamy Chicken Casserole (with pasta and spinach)
6 oz uncooked egg noodles 1 tbsp olive oil 1/4 cup chopped onion 1/4 cup chopped red bell pepper 1-10z package frozen spinach thawed and drained 2 boneless chicken breasts, cooked and chopped into bite sized pieces ( about 3/4 of a pound) 1 small can of sliced mushrooms drained 2 cups shredded cheese (your choice) original recipe called for Swiss 3/4 cup half and half light cream 8oz (1 cup) sour cream 2 eggs lightly beaten 1/2 tsp salt
1. Preheat oven to 350F, cook noodles according to package directions, drain and aside. Spray a 13X9 inch baking dish with nonstick cooking spray. 2. Heat oil in large skillet over medium-high heat. Add onion and bell pepper, cook and stir 2 minutes or until onion is tender. Add spinach, chicken, mushrooms and cooked noodles, stir to blend. 3. Combine cheese, sour cream, half and half, eggs and salt in medium bowl, blend well. 4. Add cheese mixture to chicken mixture, stir to blend. Transfer to prepared baking dish, Bake at 350F for 30-40 minutes until heated through.
