I'm giving a meatless diet a shot. Here is one day of eating for me. I'm a fairly muscular guy. Only reason I say that is that a lot of people are concerned about getting too much protein. This plan is still in the works, so I'm still learning as I go (which is the only way to learn really well, from experience).
Potato Croquettes (Patties, Zrazy) With Spinach Filling - Vegetarian (Vegan) Recipe

Potato croquettes with spinach stuffing (other names: potato zrazy, potato patties With Spinach Filling) is delicious dish stuffed with spinach for vegetarians (vegans).
Ingredients:
For filling:
- Onions - 2 pcs.
- Garlic - 1 clove
- Spinach - 250g
- Vegetable oil for frying
- Salt - 1/2 tsp
- Parsley (dried) - 1/2 tsp.
- Dill (dried) - 1/2 tsp.
- Black ground pepper - 1 pinch
- Nutmeg (ground) - 1 pinch
- Lemon juice - 1 tbsp.
For the dough:
- Potatoes - 600g
- Salt - 1/2 tsp
- Black ground pepper - 1/3 tsp.
- Dill (dried) - 1/2 tsp.
- Flour - 3 tbsp.
- Vegetable oil for frying
Cooking:
Chop onions and garlic. Wash and slice the spinach. Fry the garlic and onions, add salt, herbs and spices. Fry, stirring, for half a minute. Add the spinach. Cover with a lid. After 2-3 minutes, when the spinach decreases in volume, add lemon juice. Mix. Cover with a lid. Stew for 1 minute. Peel potatoes, boil it and mash. Add the remaining ingredients and knead the dough. Roll out the cake, put the filling and form a ball. Roll in breadcrumbs. Put on a preheated frying pan. Fry on both sides over medium heat, uncovered. Done! Bon appetit!

2 pounds zucchini (about 4 medium)
1½ teaspoons salt
1 egg or ⅓ cup or 50 g chickpea flour + ¼ cup or 60 g of water
1 red onion
2 cloves garlic
1 teaspoon dried oregano
¾ cup all-purpose flour
2 teaspoons baking powder
½ teaspoon black pepper
2 tablespoons extra virgin olive oil or more if needed
SERVE WITH
tzatziki sauce
marinara sauce
cashew sour cream
Metric:
900 g zucchini (about 4 medium)
1½ teaspoons salt
1 egg or ⅓ cup or 50 g chickpea flour + ¼ cup or 60 g of water
1 red onion
2 cloves garlic
1 teaspoon dried oregano
110 grams all-purpose flour
2 teaspoons baking powder
½ teaspoon black pepper
2 tablespoons extra virgin olive oil or more if needed
SERVE WITH
tzatziki sauce
marinara sauce
cashew sour cream

1 tsp kala namak aka black salt
1/2 tsp onion powder
1/2 tsp garlic powder
1/8 tsp turmeric powder
Black pepper to taste
No egg mixture:
8.8 oz (250 g) firm silken tofu or chickpea tofu
1/2 cup (50 g) chickpea flour
1 tsp baking powder
2-3 tbsp (20-30 ml) dairy-free milk
2 tbsp nutritional yeast (optional)
